RICK BAYLESS' DUCK CARNITAS image

8 duck legs
6 garlic cloves
salt
oregano (mexican)
Pork fat

Steps:

  • 1. Rub duck legs with salt and oregano. Place in deep baking dish. Cover and marinate overnight in pork fat (to cover) and garlic cloves 2. Bake 350 for two hours (on cookie sheet to contain mess). 3. Remove (and retain) skin and de-bone. Brown duck meat in a bit of pork fat 4. Fry skin in pork fat until crispy. Remove from pan and drain/blot dry. Chop into bits 5. Serve duck meat hot with mexican condiments and top with fried duck skin bits.
