Avocado Feta Salsa image

This salsa has become a family favorite, with the richness of avocado, and the bright tangy flavor of the feta and herbs. Add more or less of any ingredient to suit your tastes.

Number Of Ingredients 8

2 plum tomatoes, chopped
1 avocado, chopped
1/4 c finely diced red onion
1 clove garlic, minced
1 Tbsp chopped fresh parsley (or 1 tsp dry)
1 Tbsp chopped fresh oregano (or 1 tsp dry)
1 Tbsp red wine vinegar
4 oz feta cheese, crumbled

Steps:

  • 1. Combine all the ingredients, except feta, stirring gently to mix.
  • 2. Add feta cheese, folding in gently.
  • 3. Cover and chill 2 - 6 hours. Give a final stir before serving.
  • 4. Serve with pita or tortilla chips.
