Steps:
- Preheat oven to 450 degrees. Toss asparagus with the oil, salt and pepper. Transfer to a foil-lined baking sheet. Roast, stirring once, until very tender; 15 - 20 minutes. Meanwhile, boil water in a medium-sized pot. Add vinegar to the water. Gently crack each egg into the water. Cook 4 minutes. Using a slotted spoon, transfer the eggs to a paper towel to drain for a minute. Put the asparagus on a serving plate and top with the eggs.
