Grinnin' Gorilla Bundt Cake image

What self-respecting gorilla wouldn't appreciate a Bundt cake chock full of bananas, chocolate chips, and walnuts? The sour cream makes this a moist cake. You can choose a dusting of powdered sugar on top of the cooled cake or opt for a decadent glaze of 1/2 cup powdered sugar, 1 tsp milk or cream, and a TBSP of Kahlua or banana liquor.

1 teaspoon(s) baking soda
1 pinch(es) salt
1 teaspoon(s) baking powder
1 teaspoon(s) ground cinnamon
3 medium ripe bananas, mashed with fork
1/2 cup(s) sour cream
1/2 cup(s) softened butter
3/4 cup(s) finely chopped walnuts or pecans
1 cup(s) granulated white sugar
1/2 cup(s) light brown sugar firmly packed
2 large eggs
1 teaspoon(s) vanilla extract
3/4 cup(s) semi-sweet chocolate chips
OPTIONAL GLAZE TOPPING
1/2 cup(s) powdered sugar
1 tablespoon(s) Kahlua or banana liquor
1 teaspoon(s) milk, cream or half n' half

Steps:

  • Preheat oven to 350 degrees. Adjust oven rack to center position. Grease and flour a 10-12 cup bundt pan.
  • In a medium bowl, mix flour with baking soda, salt, baking powder and cinnamon. Add the walnuts into the mixture and coat well. Set aside.
  • Mash bananas with a fork in a small bowl and add in the sour cream. Set aside.
  • In a stand mixer bowl or a large bowl with hand mixer, beat the butter and sugars at low speed.
  • Add the eggs in one at a time until light and fluffy. Add the vanilla.
  • To the butter/sugar/egg mixture, add in the flour alternating with the banana mixture.
  • Mix at medium speed until all ingredients are incorporated.
  • Fold in the chocolate chips.
  • Pour the batter into bundt pan.
  • Bake for 50-60 minutes or until cake tests done with a toothpick.
  • Let cake rest for 10 minutes in the baking pan and then invert over a caking rack to cool completely.
  • Dust the cooled cake with powdered sugar or make a glaze with the milk, powdered sugar and Kahlua if desired. Drizzle over cooled cake. Store at room temperature under a cake dish or tightly wrapped.
