ASPARAGUS- POTATO SOUP image

Number Of Ingredients 9

3 cups chopped potatoes
1 14 ounce can chicken broth
10 ounce pkg of frozen asparagus or fresh
1 1/2 cups light cream
4 ounces whipped cream cheese
small bottle of red pimiento
1/2 cup chopped onion
1 tsp. salt
1/8 tsp fresh nutmeg

Steps:

  • combine potatoes, broth, onion, salt and nutmeg; boil, reduce heat, simmer covered 8 minutes until potatoes tender add asparagus, return to boil, then cover and simmer 5 more minutes combine cream and cream cheese and pimiento, stir into soup until melted, do not boil
