ASPARAGUS PIE image

Number Of Ingredients 9

1/2 pound of asparagus (you can use a whole pound if you want more full bodied taste)
2 eggs
1 cup low fat cottage cheese
1/4 cup butter melted
1/4 cup flour
1/2 teaspoon baking powder
1 cup low fat sour cream
1 tomato thinly sliced
1/4 cup grated parmesan cheese

Steps:

  • Cook asparagus until just tender;drain. Arrange in wheel spoke design on bottom of greased 9-inch pie pan, allowing tips to extend up sides of pan if necessary. Beat eggs until foamy in medium size bowl. Add cottage cheese and butter;beat until almost smooth, Mix in flour, baking powder and then stir in sour cream. Pour filling into pie pan over asparagus. Arrange tomato slices on top and sprinle with parmesan. Bake 350 ove for 30 minutes or until firm in the center. Remove from oven and let sit in pay 10 minutes. Cut into wedges and serve warm 6 servings
