Asparagus and Mushrooms in Lemon-Thyme Butter image

Number Of Ingredients 9

1 pound fresh asparagus, trimmed and cut into 1-inch pieces
1/2 pound sliced mushrooms - I used a mix of white, crimini, shiitake and porcini
1 tablespoon butter
1 teaspoon olive oil
1-1/2 teaspoons minced fresh thyme and rosemary
1 teaspoon created lemon zest (optional)
1/4 teaspoon salt
1/2 teaspoon lemon juice
1/4 teaspoon pepper

Steps:

  • In a large skillet, saute asparagus and mushrooms in butter and oil until tender.
  • Stir in remaining ingredients.
