ASIAN BUTTERNUT SQUASH SOUP image

Number Of Ingredients 15

1 butternut squash (roasted and cleaned)
1 yellow onion
1 lemongrass
1 2" piece of ginger
zest and juice of 1 orange
2 cups coconut milk
1 piece chipolte
1 carrot
1 quart vegetable stock
salt and pepper to taste
Garnish:
1 cup sour cream
1/4 cup cream
1/2 cup lime juice
1/2 piece chipolte, pureed

Steps:

  • Cut onion, carrot, ginger, lemongrass. Saute in butter until translucent. Add remaining ingredients (except the cream garnish). Simmer for 30 minutes. Puree in blender. Serve with a drizzle of the cream garnish.
