ARUGULA AND PEAR SALAD image

7 ounces arugula
3 firm Bosc pears
1/4 cup extra-virgin olive oil
juice of 1/2 lemon
salt

Steps:

  • Remove the tough stems from the arugula and arrange the leaves in a bed in a shallow salad bowl. Peel the pear slice on top of the arugula. In a small bowl, stir together the oil, lemon juice and salt to taste. Drizzle over the pears and arugula, toss and serve immediately.
