Arroz con Leche image

A traditional Cuban dessert recipe. It's a comforting rice pudding recipe from De Su Mama. Enjoy!

Number Of Ingredients 8

1 cup(s) arborio rice
2 cup(s) water
1/2 lemon rind
12 ounce(s) can evaporated milk
14 ounce(s) can sweetened condensed milk
2 stick(s) cinnamon (plus more for garnish)
1 teaspoon(s) vanilla extract
1/4 teaspoon(s) salt

Steps:

  • In a saucepan over medium heat, bring rice, cinnamon sticks, and lemon rind to boil in water. Once boiling, reduce heat to low and cover the rice. Simmer for 10-15 minutes, or until rice is tender and plump.
  • Remove lemon rind with a slotted spoon. Over low heat, add the evaporated and sweetened condensed milks. Stir constantly to combine well. Add vanilla and salt and continue to cook on low heat for 7-10 minutes, or until the pudding thickens to desired consistency.
  • Remove from heat and serve immediately. Or, store in the fridge in an airtight container
