Apricot Salad image

I always go for quick and easy and this applies.

Number Of Ingredients 16

29 ounce(s) can apricots, drained (reserve juice)
16 ounce(s) can pineapple tidbits, drained (reserve juice)
2 package(s) knox gelatin
1/2 cup(s) water
12 ounce(s) orange juice
1/2 cup(s) sugar
1/2 cup(s) pineapple juice
1/2 cup(s) apricot juice
TOPPING
1/2 cup(s) pineapple juice
1/2 cup(s) apricot juice
1/2 cup(s) sugar
2 tablespoon(s) cornstarch
1 - egg, beaten
2 tablespoon(s) butter
1 cup(s) whipped topping

Steps:

  • Soften Knox in water.
  • Heat to dissolve.
  • Add rest of ingredients. Pour into 2 quart dish. Chill completely.
  • For Topping: Cook all ingredients, except whipped topping, over low heat until thick. Stirring constantly.
  • Cool and add whipped topping and spread over chilled jello mixture.
