Apple Streusel Slice image

Just made this from a recipe in a magazine, and the family all liked it, being a not-too-sweet and soft slice. Also, the ingredients are readily available, and it's pretty easy to make.

180 g butter, softened
3/4 cup caster sugar
2 eggs, lightly beaten
1 1/2 cups plain flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 large granny smith apple, peeled and cored
1/4 cup brown sugar
1/4 cup plain flour
1 teaspoon ground cinnamon
30 g butter, softened

Steps:

  • Preheat oven to 180 degrees celcius.
  • Grease and line a 3x18x28cm slab pan with baking paper.
  • Using an electric mixer, cream butter and caster sugar until pale and creamy.
  • Mix in the egg in two batches.
  • Sift flour, baking powder, and cinnamon over the butter mixture. Fold through with a large metal spoon.
  • Spread the mixture evenly in the pan. Top with diced apple.
  • Make the streusel topping: Combine brown sugar, flour and cinnamon in a bowl. Rub in the butter using your fingers until clumps form. Crumble the topping over the slice.
  • Bake for 45-50 minutes until golden and an inserted skewer comes out clean.
  • Cool in pan, then cut into squares to serve. Would go well with vanilla ice-cream.
