Apple Rum Raisin Loaf image

Number Of Ingredients 16

2 tablespoons dark rum
2 tablespoons water
1 cup apple sauce
2 cups flour
1 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1 stick butter unsalted softened
2 large eggs room temperature
1 teaspoon lemon rind, grated
1 cup applesauce
1 apple, peeled, cored and chopped
1/2 cup raisins
1 cup Sugar

Steps:

  • preheat oven to 350F
  • Combine flour, baking soda, salt, spices. Set aside.
  • Cream butter and sugar until light and fluffy.
  • Add eggs one at a time beating well after each addition.
  • Beat in lemon rind.
  • add half of flour mix, combining. the half of applesauce. Repeat until combined.
  • Stir in raisins and diced apple.
  • Pour into well greased 9 x 5 inch pan. Bake 1 hour and 5 minutes. Cool 10 min before turning out.
  • Combine rum, water and raisins in a pot. Simmer over med heat gentle about 5 min.
  • Applesauce: 4 apples, unpeeled, quartered and cored. 1/2 cup water. 1/4 cup sugar.
