APPLE-RED CABBAGE SALAD image

2 cups thinly sliced red cabbage
2 crisp apples such as Jonagold or Honeycrisp, cored and cut into thin strips
2 tsp. apple cider vinegar
1/4 tsp. salt
1/4 tsp. toasted sesame oil, or (better) squash seed oil such as any of the ones made by Stony Brook Oils

Steps:

  • First toss the apples with the vinegar to prevent browning. Add the rest of the ingredients and toss. Serve within one hour.
