Steps:
- 1. Preheat oven to 325 degrees. Prep and cook 1 cup of steel cut oats using directions on label. Chop 1 to 2 Apples of your choice into small slices, add Earth Balance (or butter), and Palm Sugar (or sugar of your choice) and Cinnamon, then cook on medium heat until semi soft.
- 2. Mix all ingredients for the batter directly into the cooked steele cut oats.
- 3. Fill the muffin pan with batter. Side note: Don't make the same mistake I did; use cup cake liners. ;)
- 4. Bake for about 40 minutes and serve, let cool for about 10, and serve.
