Apple Crisp Cheesecake image

If you love apple crisp and cheesecake, this cheesecake is for you, with a delicious graham cracker crust filled with a luscious filling, then sprinkled with a crumbly topping, similar to an apple crisp.

2 c graham cracker crumbs
1 c finely chopped pecans
1/3 c brown sugar
2/3 c butter, melted
TOPPING
1/4 c quick cooking oats
1/2 c brown sugar
1/2 c flour
1 tsp cinnamon
1/4 c finely chopped pecans (optional)
4 Tbsp butter
caramel ice cream topping
FILLING
4 pkg (8 ounce) cream cheese, softened
1/2 c brown sugar
3/4 c sour cream
4 eggs
1 3/4 tsp cinnamon
1/2 tsp nutmeg
2 c apples, peeled, cored and slioed

Steps:

  • 1. Crust: Combine all ingredients. Press into bottom and 1 1/2 inches up sides of a 10 inch springform pan. Chill.
  • 2. Topping: Combine all ingredients, except caramel ice cream topping, until crumbly. Set aside.
  • 3. Filling: Beat cream cheese, brown sugar and sour cream for 2 minutes. Add eggs, one at a time, beating well on low speed. Add spices and vanilla. Pour into crust. Spread apples over filling. Sprinkle topping ingredients, which have been mixed, on top.
  • 4. Bake at 325 degrees for 65-75 minutes. Cool completely in pan on wire rack, Chill overnight.
  • 5. Serve with 1 tablespoon of caramel ice cream topping over each slice.
