If you love apple crisp and cheesecake, this cheesecake is for you, with a delicious graham cracker crust filled with a luscious filling, then sprinkled with a crumbly topping, similar to an apple crisp.

Steps:
- 1. Crust: Combine all ingredients. Press into bottom and 1 1/2 inches up sides of a 10 inch springform pan. Chill.
- 2. Topping: Combine all ingredients, except caramel ice cream topping, until crumbly. Set aside.
- 3. Filling: Beat cream cheese, brown sugar and sour cream for 2 minutes. Add eggs, one at a time, beating well on low speed. Add spices and vanilla. Pour into crust. Spread apples over filling. Sprinkle topping ingredients, which have been mixed, on top.
- 4. Bake at 325 degrees for 65-75 minutes. Cool completely in pan on wire rack, Chill overnight.
- 5. Serve with 1 tablespoon of caramel ice cream topping over each slice.
