APPLE CIDER SABAYON image

3 egg yolks
1/2 cup apple cider
1/2 cup sugar
1 vanilla bean, scraped
1/2 cup whipping cream

Steps:

  • Over a water bath whisk the yolks, sugar and cider until thickened and ribbons form. Whisk the cream and the vanilla separately until soft peaks form. When the yolks cool fold in the cream.
