My Grandma had me hand write this over 60 years ago. I had lost this recipe and just found it a couple of weeks ago. I'm sure you will enjoy it the way I have. My Grandma could not read or write, but she could bake and cook anything especially Cajun food as she was full blooded Cajun. So today I look back over the times that she taught me how to cook. So Grandma this is for you. I will be posting pictures later on in the week.

Steps:
- Peel and finely slice the 4 cups of Red & Delicious apples.
- Sprinkle 2 cups of sugar over the sliced apples and toss. Let sit in the sugar for 45 minutes.
- Sift 3 cups of flour, the 1/2 teaspoon of salt, the 2 teaspoons of baking soda together. Add oil, add two beaten eggs, the 1 1/2 teaspoons of pure vanilla extract to the apples and stir.
- Add the flour (a small amount at a time till mixed). After it is mixed, the batter will be thick.
- Add apples to the batter and mix well.
- Bake in a 9 x 13 pan (you can use two 9 inch pans if you would like) Bake at 350 degrees for 30 to 40 minutes. Check using a toothpick to see if cake is done.
- After the cake is baked, let cool in pans for 10 minutes, then finish cooling on wire racks. After the cake is cooled, ice with the following icing.
- Get together the ingredients for the icing.
- Begin icing once you remove cake from oven by heating butter, sugar, and evaporated milk to a boil, stir often.
- Add vanilla, coconut, and pecans. Boil for about 2 to 3 minutes.
- Pour over warm cake. best served the next day.
