Apple Cake / Caramel Glaze image

Number Of Ingredients 15

1 tsp cinnamon
1/4 c sugar
4 apples, peeled, chopped small
3 eggs
1 c oil
2 c sugar
2 c flour
1/2 tsp baking soda
1 tsp cinnamon
GLAZE
2 Tbsp butter
1/2 c brown sugar, packed
2 Tbsp milk
chopped pecans, optional
you may want to double the glaze...i hadn't made this cake in some time...forgot i doubled it, but didn't this time

Steps:

  • 1. Preheat oven to 350 degree F. Grease a Bundt or tube pan. Combine cinnamon and sugar and coat pan with mixture.
  • 2. Mix apples, eggs and oil with electric mixer.
  • 3. Add flour, sugar, baking soda, and cinnamon; mix well. ( batter will be thick ).
  • 4. Pour into pan and bake about 1 hour or until a toothpick inserted in center comes out clean.
  • 5. Allow cake to rest in pan for at least 10 minutes before inverting onto a cake plate.
  • 6. Combine butter, brown sugar and milk in a saucepan. Bring to a boil and cook for 1 minute. Spoon over cake. Allow to cool before serving.
