Another Great Breakfast Casserole image

Delicious! This casserole can be made ahead, as so many others. Switch out the meats, if you don't like sausage. Make it your own. Enjoy! My photos

Number Of Ingredients 16

1/2 pound(s) bulk, sausage - i used bob evans hot
1 - tomato, chopped
1 - onion, chopped
1 - 30 ounce(s) bag, shredded hashbrowns - thawed
8 - eggs
2 cup(s) shredded, cheddar cheese
1/2 cup(s) eggs, substitute
1 - 8 ounce(s) sour cream
1 1/2 teaspoon(s) salt
1 teaspoon(s) pepper
1 teaspoon(s) ground mustard
1/2 teaspoon(s) dill
1/2 teaspoon(s) paprika
TOPPING
3/4 - 1 cup(s) corn flakes, slightly crushed
2 - 3 tablespoon(s) melted, butter

Steps:

  • If baking the same day, preheat oven to 350 degree F. Spray a 9 x 13 baking dish with non stick cooking spray. In a large skillet, cook pork sausage (adding onion and tomato half way through) over medium-high heat about 10 minutes, stirring occasionally, until fully cooked.
  • In large bowl, toss sausage mixture, potatoes and cheese. Spread into baking dish.
  • In another large bowl, beat eggs, egg substitute, milk, sour cream and all spices with a wire whisk until well blended. Pour over potato mixture.
  • You can store this in the fridge covered overnight, or bake right away if desired.
  • Bake uncovered 35 minutes. Meanwhile, in small bowl, mix cornflake crumbs and melted butter. ( if baking this casserole at a later time, do not mix cornflakes till then.)
  • Remove casserole from oven long enough to sprinkle cornflakes over casserole.
  • Bake another 15 minutes or until knife inserted in center comes out clean. Enjoy!
