ANOTHER GREAT BREAKFAST CASSEROLE
Delicious! This casserole can be made ahead, as so many others. Switch out the meats, if you don't like sausage. Make it your own. Enjoy! My photos

Steps:
- If baking the same day, preheat oven to 350 degree F. Spray a 9 x 13 baking dish with non stick cooking spray. In a large skillet, cook pork sausage (adding onion and tomato half way through) over medium-high heat about 10 minutes, stirring occasionally, until fully cooked.
- In large bowl, toss sausage mixture, potatoes and cheese. Spread into baking dish.
- In another large bowl, beat eggs, egg substitute, milk, sour cream and all spices with a wire whisk until well blended. Pour over potato mixture.
- You can store this in the fridge covered overnight, or bake right away if desired.
- Bake uncovered 35 minutes. Meanwhile, in small bowl, mix cornflake crumbs and melted butter. ( if baking this casserole at a later time, do not mix cornflakes till then.)
- Remove casserole from oven long enough to sprinkle cornflakes over casserole.
- Bake another 15 minutes or until knife inserted in center comes out clean. Enjoy!
CROISSANT BREAKFAST CASSEROLE
Steps:
- In a small bowl, mix marmalade, preserves, orange juice and zest. Arrange croissant bottoms in a greased 13x9-in. baking dish. Spread with 1-1/2 cups marmalade mixture. Add croissant tops., In another bowl, whisk eggs, cream and extract; pour over croissants. Spoon remaining marmalade mixture over tops. Refrigerate, covered, overnight., Preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake, uncovered, 25-30 minutes or until a knife inserted in the center comes out clean. Let stand 5 minutes before serving. Serve with strawberries.

- Add the diced onion, red bell pepper, and green bell pepper to the skillet with the sausage and sauté until soft and translucent.
- Add the drained diced tomatoes, garlic powder, dried basil, salt, and pepper to the skillet and stir until well combined.
- Pour the sausage and vegetable mixture into the prepared baking dish and spread it out in an even layer.
- In a medium bowl, whisk together the eggs and milk until well combined.
- Pour the egg mixture over the sausage and vegetable mixture in the baking dish, making sure it's evenly distributed.
- Sprinkle the shredded cheddar cheese over the top of the casserole.
- Bake the casserole in the preheated oven for 30-35 minutes, or until the eggs are set and the cheese is melted and golden brown.
- Sprinkle the chopped fresh parsley over the top of the casserole before serving.
