1/2 pound(s) bulk, sausage - i used bob evans hot
1 - tomato, chopped
1 - onion, chopped
1 - 30 ounce(s) bag, shredded hashbrowns - thawed
8 - eggs
2 cup(s) shredded, cheddar cheese
1/2 cup(s) eggs, substitute
1 - 8 ounce(s) sour cream
1 1/2 teaspoon(s) salt
1 teaspoon(s) pepper
1 teaspoon(s) ground mustard
1/2 teaspoon(s) dill
1/2 teaspoon(s) paprika
TOPPING
3/4 - 1 cup(s) corn flakes, slightly crushed
2 - 3 tablespoon(s) melted, butter

Steps:

  • If baking the same day, preheat oven to 350 degree F. Spray a 9 x 13 baking dish with non stick cooking spray. In a large skillet, cook pork sausage (adding onion and tomato half way through) over medium-high heat about 10 minutes, stirring occasionally, until fully cooked.
  • In large bowl, toss sausage mixture, potatoes and cheese. Spread into baking dish.
  • In another large bowl, beat eggs, egg substitute, milk, sour cream and all spices with a wire whisk until well blended. Pour over potato mixture.
  • You can store this in the fridge covered overnight, or bake right away if desired.
  • Bake uncovered 35 minutes. Meanwhile, in small bowl, mix cornflake crumbs and melted butter. ( if baking this casserole at a later time, do not mix cornflakes till then.)
  • Remove casserole from oven long enough to sprinkle cornflakes over casserole.
  • Bake another 15 minutes or until knife inserted in center comes out clean. Enjoy!

1/2 cup apricot preserves
1/3 cup orange juice
3 teaspoons grated orange zest
6 croissants, split
5 large eggs
1 cup half-and-half cream
1 teaspoon almond or vanilla extract
Quartered fresh strawberries

Steps:

  • In a small bowl, mix marmalade, preserves, orange juice and zest. Arrange croissant bottoms in a greased 13x9-in. baking dish. Spread with 1-1/2 cups marmalade mixture. Add croissant tops., In another bowl, whisk eggs, cream and extract; pour over croissants. Spoon remaining marmalade mixture over tops. Refrigerate, covered, overnight., Preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake, uncovered, 25-30 minutes or until a knife inserted in the center comes out clean. Let stand 5 minutes before serving.
