AMY'S SALAD image

Number Of Ingredients 12

1 head Romaine lettuce
1/2 Red Onion sliced thin
1 package Blue cheese crumbled
1/3 C. toasted pine nuts
1 fresh ripe pear in season or fuji apple, sliced
Dressing:
1/2 C. White balsamic vinegar
2 TBSP fresh lemon juice
1/2 tsp. dijon mustard
1 small clove of garlic minced or 1/2 a large one
twist of freshly cracked pepper
1/8 C to 1/4 C olive oil

Steps:

  • Make dressing ahead to give it time to marry and chill slightly (too much time in the fridge with solidify the olive oil) Add in all ingredients except oil and adjust to taste (lemon, vinegar, garlic can be different every time) whisk in oil. Wash greens, tear and toss in some of the dressing, arrange onions, pears/apples on greens sprinkle with the blue cheese and pine nuts, drizzle a little more dressing on top, Enjoy!
