Steps:
- To toast coconut, preheat oven to 350*. Spread the coconut out in a thin layer on a baking sheet, and toast, stirring or shaking the pan occasionally, until the coconut is golden, about 5 min. Preheat oven to 400*. Peel and dice the sweet potatoes and yams into 1/2 in. cubes. Toss with the oil and salt. Spread into a single layer on a baking sheet. Roast, turning with a spatula 2-3 times, until the sweet potatoes are fork-tender and starting to brown, 20-25 min. Let cool, then sprinkle with shredded coconut.
