ALMOND COUSCOUS image

Number Of Ingredients 10

3 cups chicken stock
2 cups couscous
1/2 cup chopped fresh cilantro
3 scallions chopped
grated peel and juice of 1 lemon
2 tbsps olive oil
salt and freshly ground pepper
1/2 cup slivered or sliced
1/2 cup fresh orange juice
1/2 cup toasted almonds

Steps:

  • 1. Boil chicken stock and o.j. 2. Stir in couscous, cover, stir, remove from heat for 10-15 minutes, or until liquid is absorbed 3. Fluff coucous in a bowl, add everything but almonds. Fluff. 4. Garnish with almonds.
