POMEGRANATE CHICKEN WITH ALMOND COUSCOUS

Pomegranate chicken with almond couscous image

Jazz up chicken breasts in this fruity, sweetly spiced sauce with pomegranate seeds, toasted almonds and tagine paste

Provided by Cassie Best

Categories     Dinner, Main course

Time 20m

Number Of Ingredients 10

1 tbsp vegetable oil
200g couscous
1 chicken stock cube
1 large red onion, halved and thinly sliced
600g chicken mini fillets
4 tbsp tagine spice paste or 2 tbsp harissa
190ml bottle pomegranate juice (not sweetened; we used Pom Wonderful)
100g pack pomegranate seeds
100g pack toasted flaked almond
small pack mint, chopped

Steps:

  • Boil the kettle and heat the oil in a large frying pan. Put the couscous in a bowl with some seasoning and crumble in half the stock cube. Add the onion to the pan and fry for a few mins to soften. Pour boiling water over the couscous to just cover, then cover the bowl with a tea towel and set aside.
  • Push the onion to one side of the pan, add the chicken fillets and brown on all sides. Stir in the tagine paste or harissa and the pomegranate juice, then crumble in the rest of the stock cube and season well. Simmer, uncovered, for 10 mins until the sauce has thickened and the chicken is cooked through. Stir through the pomegranate seeds, saving a few to scatter over before serving.
  • After 5 mins, fluff up the couscous with a fork and stir through the almonds and mint. Serve the chicken on the couscous with the sauce spooned over.

SPICED HERB & ALMOND COUSCOUS

Spiced herb & almond couscous image

This full-flavoured recipe is perfect in summer, it tastes as good hot it does cold

Provided by Jane Hornby

Categories     Buffet, Dinner, Lunch, Main course, Side dish, Snack, Supper, Vegetable

Time 20m

Number Of Ingredients 9

red onion , halved and sliced
425ml hot chicken stock (from a cube is fine)
pinch saffron strands, optional
1 fat red chilli , sliced
500g couscous
2 x 20 packs coriander , leaves only
50g toasted whole almond
handful dates , roughly chopped (we used medjool dates)
juice ½ lemon

Steps:

  • Heat some oil in a roasting tray and then add the onions and fry for about 5 mins until just softened. While you're frying, add the saffron strands to the stock if using, so the flavour and colour infuses. (If you are making the Fragrant chicken too (see 'Goes well with') use the same pan to add flavour to this dish and leave the juices in there, but you can tip out some of the chicken fat if you like).
  • Tip the chilli into the tray, fry for 1 min more, then take off the heat. Add the couscous and stock, then cover with cling film for 10 mins. Once the couscous has absorbed all the stock, quickly chop the coriander (if you chop it too soon it will start to wilt), then fork it through the couscous with the almonds, dates and lemon juice and serve straight away. To serve cold, leave to cool, then add the chopped coriander just before eating.

What is Almond Couscous?

Almond couscous is a dish made from couscous, a North African and Middle Eastern staple food made from semolina wheat. This variation of couscous is flavored with almond, which infuses the dish with a nutty and slightly sweet taste.

The History of Almond Couscous

Couscous has a long and rich history. Believed to have originated in North Africa, couscous has been consumed for centuries in the Mediterranean and the Middle East. The addition of almonds to couscous is a modern twist that adds new interest and flavor to the dish.

The Benefits of Almond Couscous

Like traditional couscous, almond couscous is a low-fat and low-calorie dish that is high in carbohydrates. Couscous is also an excellent source of plant-based protein and can be a good alternative to meat. The addition of almonds adds a dose of healthy fat and extra protein, making this dish even more nutritious.

How to Make Almond Couscous

To make almond couscous, start by adding 1 cup of couscous to a bowl. Heat 1 ¼ cup of water to boiling and pour over the couscous. Cover the bowl with a plate, let it sit for 5 minutes, and then fluff with a fork. Next, toast ½ cup of sliced almonds over medium-low heat until they are lightly browned and fragrant. Add the almonds to the couscous, along with 1 tablespoon of olive oil, 1 tablespoon of honey, and a pinch of salt. Mix everything together and serve.

Ways to Serve Almond Couscous

Almond couscous is a versatile dish that can be served in a variety of ways. It can be eaten as a side dish, served alongside grilled chicken or fish. It can also be served as a vegetarian main course by adding roasted vegetables, such as sweet potatoes or squash, and a handful of greens.

In this article, we will provide you with valuable tips when making almond couscous recipes. Tip 1: Use the Right Couscous The right kind of couscous for almond couscous is typically the Israeli couscous. It is larger than the traditional North African couscous and has a distinctively chewy and wheaty flavor. It is best to check the package if it is specifically labeled as Israeli couscous. If it is not available in your local grocery, you can always substitute regular couscous or quinoa. Tip 2: Prioritize Toasted Almonds Toasted almonds have a rich and robust flavor that can elevate the taste of the dish. It is advisable to toast the almonds in advance to ensure that they are evenly browned and crunchy. To toast the almonds, spread them evenly on a sheet pan and bake in the oven at 350°F for 8-10 minutes or until they are golden brown. Be sure to let the almonds cool before adding to the couscous mixture. Tip 3: Incorporate Vegetables Adding vegetables to almond couscous not only enhances its flavor but also increases its nutritional value. Vegetables like zucchini, cherry tomatoes, and cucumbers are great options that can add color and texture to the dish. Some of the common spices used in almond couscous are cumin, cinnamon, and coriander. It is crucial to use freshly ground spices to achieve the best flavor. You can choose to mix the spices in the couscous mixture or use them as a seasoning for the vegetables. Tip 5: Add Protein Adding protein to the dish can make it more filling and satisfying. You can use different sources of protein, such as chicken, shrimp, beef, or tofu. Grilled chicken or roasted shrimp are excellent options that can add a savory flavor to the dish.
