Almond Brittle Dipped in Chocolate image

I always like to create new recipes. This one is an Almond Brittle instead of the usual Peanut Brittle. We really like almonds so this was prefect. Dipping in melted chocolate of your choice adds a special touch of flavor. It makes a wonderful gift for Christmas served up in a tin. Have fun and cook!

1 1/2 c almonds, chopped in halves
1 c sugar, granulated
1/2 c karo syrup
1/8 tsp salt
1 tsp butter
1 tsp almond extract
1/2 tsp vanilla extract
2 tsp baking soda
4 oz melted chocolate (almond bark, semi-sweet german chocolate, etc.)

Steps:

  • 1. Mix together in a 2-quart Pyrex bowl sugar, syrup and salt. Microwave 3 minutes at full power. Stir in almonds and microwave one minute. Stir and microwave 4 more minutes. Add butter, almond and vanilla extract and stir well. Cook another 2 minutes. Gently stir in soda until light and foamy; work quickly to pour into lightly greased cookie sheet. Cool. Break into small to medium pieces.
  • 2. Melt your favorite chocolate such as almond bark, Semi-sweet German Chocolate (temper this one with a little butter), or dark chocolate pieces in a double boiler. Dip pieces of brittle into melted chocolate covering only half of each piece. Place on rack to dry. Store in tin.
