Adele's Sumptuous Carrot Cake image

One slice is worth a thousand words! This is an amazingly moist carrot cake which I first tasted over 20 yrs. ago at a cousin's home. She served this luscious cake and I didn't leave without the recipe. Try it ... I think you'll definately agree with me...it's the BEST!

Number Of Ingredients 16

3 cups flour
2 cups sugar
4 eggs
1 cup corn oil
3 cups finely grated carrots
1 cup walnuts (chopped)
1 cup raisins
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons vanilla
1 teaspoon nutmeg
1/2 teaspoon salt
2 teaspoons cinnamon
1 (8 ounce) package cream cheese (room temperature)
1/2 cup powdered sugar
1/2 teaspoon vanilla

Steps:

  • Sift and mix all dry ingredients.
  • Add all wet ingredients.
  • Pour batter into well-greased tube pan (4 inches high x 9 1/2 inches diameter, smaller can be used it just turns out higher).
  • Bake in 350 degree oven for approximately 1-1/4 hours or until cake tester comes out clean.
  • Cool and spread on cream cheese icing.
