You can use fresh or frozen strawberries in this versatile strawberry topping sauce. This topping is fresh, quick, & easy and gives desserts that little something extra!

1 Tablespoon cornstarch
3 Tablespoons (45ml) warm water
1 lb strawberries, hulled and sliced in half (you can use frozen; don't thaw)
zest and juice from 1/2 small lemon (see note)*
1/4 cup (50g) granulated sugar

Steps:

  • Whisk the cornstarch and water together until all the cornstarch has dissolved. (I just use a fork to mix-very easy.)
  • Place the cornstarch mixture, along with the rest of the ingredients, into a small saucepan over medium heat. Using a wooden spoon or rubber spatula, stir the mixture as it cooks. Break up some of the strawberries as you stir.
  • Bring it to a simmer and allow to simmer for 5 minutes, stirring constantly. After 5 minutes, remove pan from the heat and allow to cool. The mixture will thicken as it cools.
  • You can serve the sauce warm before it cools completely if desired, or store in the refrigerator for up to 1 week. Strawberry topping will be thick after refrigeration, so microwave for 15 seconds or warm on the stove to thin out, if desired.

My mom used to make this for our family back in '72. I totally loved it then as I do now! Very quick and easy to make. My mom used to make homemade crust but I always have trouble with mine and I recently found Keebler® ready made shortbread pie crusts!

1 (4 ounce) package cream cheese, softened
1 tablespoon heavy whipping cream
1 (9 inch) prepared shortbread pie crust (such as Keebler®)
2 cups fresh strawberries, quartered
2 cups fresh strawberries, mashed
1 cup white sugar
¼ cup cornstarch
1 cup heavy whipping cream
2 tablespoons white sugar
¼ teaspoon vanilla extract

Steps:

  • Beat cream cheese and 1 tablespoon heavy cream together in a bowl. Spread into bottom of pie crust. Arrange about 2 cups quartered strawberries onto cream cheese layer.
  • Mix 2 cups mashed strawberries, 1 cup sugar, and cornstarch in a saucepan; cook over medium heat until slightly reduced and thickened, about 10 minutes. Cool completely.
  • Pour cooled strawberry mixture over strawberry layer in pie crust. Chill in refrigerator until set, 2 hours.
  • Beat 1 cup heavy cream, 2 tablespoons sugar, and vanilla extract in a bowl until light and fluffy, about 5 minutes. Spread over cooled pie.

4 cups strawberries, quartered into pieces
4 ounces cream cheese, softened
8 ounces whipping cream
1 cup sugar
4 tablespoons cornstarch
1 ready shortbread crust, Keebler brand

Steps:

  • Spread cream cheese which has been softened with a little cream on bottom of pie shell.
  • Place cut up strawberries on top of cream cheese.
  • Place left over fresh strawberries in sauce pan and mash.
  • Add sugar and cornstarch.
  • Cook for 10 minutes on medium until really thick.
  • Cool strawberry mixture. (Make sure its cooled).
  • Pour over pie.
  • Chill pie for 2 hours.
  • Whip whipping cream (I add a couple tablespoons of sugar and some vanilla for extra flavor).
  • Spread over top of cooled pie.
  • EAT and ENJOY!

This is a summertime tradition in my family, and we have NEVER tasted, (or even seen), a strawberry pie like it! You will LOVE this. 'The Old Boy' is my dad, but my mom remembers her grandmother making a pie like this when she was young.

1 recipe pastry for a 9 inch single crust pie
¾ cup white sugar
¾ cup all-purpose flour
6 tablespoons butter
1 pinch ground nutmeg
4 cups fresh strawberries, hulled
½ cup white sugar
½ cup all-purpose flour
1 tablespoon cornstarch

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place a drip pan on lowest shelf to catch pie juices.
  • To Make Topping: In a medium bowl, mix until fluffy the 3/4 cup sugar, 3/4 cup flour, butter, and nutmeg.
  • Place cleaned strawberries in a deep bowl. In a separate bowl, mix together the 1/2 cup sugar, 1/2 cup flour, and cornstarch. Gently coat berries with this mixture; be careful not to crush berries.
  • Pour berries into prepared pie crust mounding them in the middle; mounding is necessary as the berries will sink as they bake. Cover berries with crumb topping and top crumbs with about 15 pea-sized blobs of butter. Wrap edges of pie crust with foil to prevent burning.
  • Bake pie in preheated oven for 20 minutes, then reduce heat to 375 degrees F (190 degrees C) and bake for an additional 40 minutes. When there are 10 minutes left of baking, sprinkle a little extra sugar over crumb topping and then finish baking.
