HOMEMADE FRESH PUMPKIN PIE



Homemade Fresh Pumpkin Pie image

This recipe is made from fresh pumpkin, not canned. Hope you enjoy it as much as my family does. Happy Thanksgiving.

1 ⅓ cups all-purpose flour
½ teaspoon salt
½ cup shortening
3 ½ tablespoons cold water
2 cups mashed, cooked pumpkin
1 (12 fluid ounce) can evaporated milk
2 eggs, beaten
¾ cup packed brown sugar
½ teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Prepare pie crust by mixing together the flour and salt. Cut shortening into flour; add cold water 1 tablespoon at a time (you may need only 3 tablespoons, or up to 4 tablespoons). Mix dough and repeat until dough is moist enough to hold together.
  • With lightly floured, hands shape dough into a ball. On a lightly floured board roll dough out to about 1/8 inch thickness. With a sharp knife, cut dough 1 1/2 inch larger than the upside-down 8- to 9-inch pie pan. Gently roll the dough around the rolling pin and transfer it right-side up onto the pie pan. Unroll, easing dough into the bottom of the pie pan.
  • In a large bowl, beat pumpkin with evaporated milk, eggs, brown sugar, cinnamon, ginger, nutmeg and salt with an electric mixer or immersion blender. Mix well. Pour into a prepared crust. Bake 40 minutes or until when a knife is inserted 1 inch from the edge comes out clean.

Chex® Party Mix Contest Recipe 2009! Butter, brown sugar and spice make a sweet and crunchy cereal mix.

1/4 cup brown sugar
1 tablespoon pumpkin pie spice
1/4 cup butter
2 teaspoons vanilla
2 cups Cinnamon Chex™ cereal
2 cups Wheat Chex™ cereal
2 cups Honey Nut Chex™ cereal
8 oz pecans

Steps:

  • In small bowl, mix brown sugar and pumpkin pie spice; set aside. In small microwave-safe dish, microwave butter on High about 30 seconds or until melted. Stir in vanilla. In large microwavable bowl, mix all cereals and pecans. Pour butter mixture over cereal mixture, stirring until evenly distributed. Add sugar and spice mixture and stir until coated.
  • Microwave uncovered on High 5 minutes or until mixture begins to brown, stirring every minute. Spread on wax paper or a cookie sheet to cool. Store in airtight container.

In this recipe you use real pumpkin puree..and all the spices .. this sounded so good-I thought you might like it too-- I tried this recipe for my family on Halloween. and will make again for Thanksgiving and probably Christmas too!

2 tablespoon(s) canned pumpkin,100% pure solid
1/2 cup(s) brown sugar,packed
3 tablespoon(s) butter.melted
1/2 teaspoon(s) ground cinnamon
1/4 teaspoon(s) each of nutmeg and allspice
2 cup(s) corn chex
1 1/2 cup(s) rice chex
1/2 cup(s) walnut pieces

Steps:

  • Combine the melted butter, pumpkin, brown sugar, and spices in a large bowl. Blend well. Add cereal and nuts to the bowl. Carefully stir until mixture is well coated.
  • Preheat oven to 350^.(do not make this recipe in the microwave- it will not cook well and be one big lump)
  • Pour mixture into a well greased or sprayed roasting pan and spread in a single layer. Place in oven for 20 to 35 minutes depending on your oven. Stir mixture every 10 minutes. Keep an eye on this while baking , as it can burn quickly. It should be dark because of the pumpkin and spices, but not black! --- Mixture will look steamy from the moisture of the pumpkin. It will disappear as it cools.
  • Remove from oven and let cool slightly. Place on waxed paper or cookie sheet and separate into bite size pieces.
