Time 1h15m

Number Of Ingredients 10

400 g (3 med-large or 4 small apples-almost 3 and 1/2 cups) Golden Apples, peeled, cored and sliced*
2 tablespoons granulated sugar
2 teaspoons lemon juice**
½ teaspoon lemon zest
½ teaspoon ground cinnamon
105 g (3/4 cup) all-purpose flour ((dip and sweep)***)
105 g (1/2 cup) granulated sugar
75 g (1/3 cup) butter, cut into cubes, cold
75 g (1/2 cup) mixture of ground and roughly chopped walnuts and hazelnuts
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350°F(177°C). Grease 8 inch (20cm) square pyrex or an oven-proof dish and set aside.
  • Peel, core and slice the apples into cubes almost 0,8 inches (2 cm) thick. Place the cube apples into a medium bowl and toss with sugar, cinnamon, lemon zest and lemon juice. Leave the excess juice in the bowl and line the mixture evenly into the oven-proof dish.
  • Crumble: Place the cubed butter and flour into a medium bowl. Rub them with your fingertips or use a fork to cut butter into flour until they look like crumbs. Add in the sugar, cinnamon and nuts, just mix to combine.
  • Assemble: Sprinkle the crumbles over the apples evenly. If you don't want your apples to be caramelized too much from the sides, shake the dish so the crumbles can coat the sides.
  • Bake for 55-60 minutes or until the top becomes golden brown and the crumbles are crispy.
  • Remove from the oven and serve with ice-cream or heavy cream.

Yield 6

Number Of Ingredients 11

For the Filling
1 pound apples (Bramleys or other medium-to-soft apples)
Optional: pinch ground cinnamon
2 tablespoon golden caster sugar
For the Topping
6 ounces all-purpose flour (or plain flour)
4 ounces golden caster sugar
4 ounces butter (cold)
For Serving:
1 cup custard (to taste)
Optional: 1 pint vanilla ice cream

Steps:

  • Gather the ingredients.
  • Peel, core, and chop apples into chunky pieces. Don't cut apples too small because when cooked they could disintegrate, and you want the cooked fruit to have some texture.
  • Place apples in a mixing bowl and sprinkle with sugar and cinnamon, if using.
  • Arrange apples into a shallow baking dish, approximately 9 x 7 inches. Reserve.
  • Gather the ingredients.
  • In a large baking bowl, place flour and sugar. Cut butter into small pieces and add to bowl.
  • Using your hands, rub butter into flour and sugar until you have a very coarse mixture. It doesn't have to feel or look even, as this is quite a rustic dish and works well with an irregular texture.
  • Alternatively, make crumble mixture in a food processor by placing all topping ingredients into processor and pulsing until you get a coarse mixture. Do not overmix.
  • Evenly sprinkle topping over apples, but be sure there aren't parts of topping that are too thick as it will not crisp up, nor allow apples to cook nicely.
  • Place dish into preheated oven and bake until golden, about 30 minutes. The apples will appear bubbling through from underneath.
  • Remove from oven and let dish rest for 5 minutes before serving.
  • Serve with custard or vanilla ice cream.
