1 cup boiling water
10 ounces birds eye frozen raspberries in light syrup
1 cup sour cream (1/2 pint)

Steps:

  • Dissolve gelatin in boiling water.
  • Add frozen raspberies and stir until berries separate and gelatin begins to thicken.
  • Blend in sour cream.
  • Pour into mold or glass serving bowl.
  • Chil for 3 hours.

Strawberries Romanoff for the '90s image

1 10-ounce package frozen raspberries in syrup, thawed
2 12-ounce baskets strawberries, hulled, quartered
5 tablespoons sugar
3 tablespoons Grand Marnier
1 tablespoon fresh lemon juice
1 1/2 teaspoons vanilla extract
1 quart vanilla ice cream, softened
1 cup chilled whipping cream

Steps:

  • Puree raspberries in syrup and 1 cup strawberries in processor. Strain into medium bowl, pressing on solids to extract as much juice as possible. Mix 3 tablespoons sugar, Grand Marnier, lemon juice and 1 teaspoon vanilla into syrup.
  • Stir 1/2 cup syrup mixture into ice cream; freeze 1 hour to 4 hours. Mix remaining strawberries into remaining syrup; chill 1 hour to 4 hours. Let ice cream soften slightly before serving.
  • Beat whipping cream, remaining 2 tablespoons sugar and 1/2 teaspoon vanilla in medium bowl until soft peaks form. Divide strawberry mixture among 6 glasses. Top each with scoop of ice cream. Garnish with whipped cream.

1 pint blueberries, washed and drained
1 pint raspberries, washed and drained
1 cup low-fat yogurt or 1 cup mascarpone cheese
1/4 cup brown sugar
mint, for garnish

Steps:

  • Preheat broiler.
  • Divide the berries among 4 individual oven proof dishes.
  • Top each with 1/4 of the yogurt (or mascarpone cheese) and sprinkle with 1 tablespoon of brown sugar.
  • Broil for about 3 minutes or until the sugar melts and caramelizes on the top.
  • Serve with a garnish of mint.

What a delightful and unique dessert! It's smooth and creamy with a bit of tang from the sour cream. The raspberries really bring the dessert together and add a fresh pop of flavor. It's simple but elegant. Great for Valentine's Day or if having a dinner party.

1/2 pt whipping cream
3/4 c sugar
1 pkg gelatin, unflavored
3/4 c cold water
1 c sour cream
1 tsp vanilla
1 pkg frozen raspberries

Steps:

  • 1. Warm whipping cream and sugar in double boiler until lukewarm.
  • 2. Soak gelatin in cold water for 5 minutes.
  • 3. Add gelatin to cream mixture and continue to heat. When gelatin and sugar have completely dissolved, remove from heat and cool.
  • 4. When mixture begins to thicken, stir in sour cream and vanilla. Beat entire mixture until smooth.
  • 5. Pour into individual molds. Let set in refrigerator about 4 hours or until firm.
  • 6. Unmold by lowering molds almost to rim in a bowl of lukewarm water for 10 seconds. Gently loosen sides of the gelatin with a paring knife.
  • 7. Place each on individual dessert plates. Top with thawed raspberries and serve.

1 tablespoon brandy or 1 tablespoon vanilla
1/2 cup heavy cream
3 tablespoons sugar
4 cups fresh strawberries

Steps:

  • Mix sour cream, brown sugar and Brandy in a bowl.
  • In a separate bowl, whip cream until starts to thicken and add sugar--whip until thick.
  • Fold cream into sour cream mixture and blend well.
  • Serve with fresh strawberries.
