No cranberries in it. This is Barbara Yost's recipe and she is/was a feature writer for the Phoenix Gazette. This was printed in a MADD fund raiser cookbook. Sounds interesting.

1 (3 ounce) package raspberry Jell-O gelatin
1 cup boiling water
1 cup cold water
1 (8 ounce) container cream cheese, softened
1 (10 ounce) package frozen raspberries, thawed, well drained
1/2 cup walnuts, chopped
lettuce leaf, for garnish

Steps:

  • In a medium mixing bowl, combine jello mix and boiling water; stir until jello is dissolved. Add cold water and mix well.
  • In another bowl, combine half of the jello mixture with the cream cheese; blend well. Pour mixture into the bottom on a lightly oiled 3 cup mold.
  • Refrigerate until almost set.
  • Add raspberries and walnuts to remaining half of the jello mixture.
  • Leave at room temperature until cream cheese mixture in the refrigerator is almost set. Pour the raspberry mixture over the cream cheese mixture and refrigerate until firm.
  • To serve, turn onto plate covered with lettuce leaves.

This yummy recipe is and has been a staple and favorite dish in our family esp. at Thanksgiving and Christmas for many years. We like the tang of the cranberry softened with the other ingredients. It makes a wonderful side dish and can pass as a dessert, too. It would be good anytime you were serving a turkey, chicken or ham dish.

1 (6 ounce) box raspberry Jell-O gelatin
2 cups boiling water
1 (20 ounce) can crushed pineapple
1 (16 ounce) can whole berry cranberry sauce
1 cup chopped pecans (optional)
1 (8 ounce) package cream cheese
1 (8 ounce) container sour cream
1/2 cup sugar

Steps:

  • Mix jello with the two cups of boiling water till disolved.
  • Add the can of pineapple including the juice and the whole cranberry sauce and nuts.
  • Let set in bowl or mold of choice.
  • Blend the cream cheese, sour cream and sugar well.
  • After jello has set, spread on top.

2 packages (3 ounces each) raspberry gelatin
1-1/2 cups boiling water
2 packages (10 ounces each) frozen sweetened raspberries, thawed and drained
2 cans (8 ounces each) crushed pineapple, undrained
1/4 teaspoon salt
1 package (8 ounces) cream cheese, softened
1/2 cup sour cream

Steps:

  • In a bowl, dissolve gelatin in water. Stir in the raspberries, pineapple and salt. Pour half into an 8-cup ring mold coated with cooking spray; refrigerate for 30 minutes or until firm. Let remaining gelatin mixture stand at room temperature., In a bowl, beat cream cheese and sour cream until smooth. Carefully spread over gelatin in mold; top with remaining gelatin mixture. Refrigerate for 6 hours or until firm.

1 (3-ounce) package cream cheese
1/3 cup walnuts finely chopped
1 1/2 cups water boiling
1 (6-ounce) package raspberry jello
2 (10-ounce) packages raspberries partially thawed
lettuce leaves

Steps:

  • Divide cream cheese into 18 equal portions shape into small balls. Roll in nuts, pressing hard enough to make nuts cling to cheese set aside.In a medium bowl pour boiling water over gelatin. Stir until gelatin is dissolved. Add raspberries and stir until thawed. Pour 1/2 cup mixture into a 4-cup mold. Arrange cheese balls in mold cover and chill just until set, about 30 minutes. Gently pour remaining gelatin over balls. Cover and chill until firm.Unmold onto a chilled plate. Garnish with lettuce leaves.

Grammy's Famous Raspberry Jello Mold image

I make this a few times a year in December and November as a tribute to my Grandmother. This was her signature family recipe and we often make it on Christmas or Thanksgiving in remembrance of her.

1 cup hot water
2 (6 ounce) packages raspberry Jell-O gelatin
1 (18 ounce) jar applesauce
1 (8 ounce) package frozen raspberries

Steps:

  • Mix the hot water and Jello together. Stir very very well.
  • Add nearly the whole medium-sized jar of applesauce and the raspberries.
  • Put in a circular mold (similar to a bundt pan) and chill overnight to set.
