2 cups all-purpose flour
3/4 cup sugar
1/4 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature
1 cup buttermilk
1/3 cup unsweetened applesauce
1/3 cup butter, melted
1/2 teaspoon almond extract
2 cups fresh or frozen raspberries
TOPPING:
2/3 cup sliced almonds
1/2 cup packed brown sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°. In a large bowl, whisk the first 6 ingredients. In another bowl, whisk eggs, buttermilk, applesauce, butter and extract; stir into dry ingredients just until moistened. Gently fold in raspberries., Transfer batter to a 13x9-in. baking pan coated with cooking spray. In a small bowl, mix topping ingredients; sprinkle over batter. Bake 30-35 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack. Serve warm.

3/4 cup milk
1/2 cup butter or margarine, melted
1 teaspoon vanilla
1/2 teaspoon almond extract
1 egg
1 1/4 cups Gold Medal™ all-purpose flour
3/4 cup Gold Medal™ whole wheat flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup fresh raspberries
1/4 cup sliced almonds
1/2 cup powdered sugar
1 tablespoon butter or margarine, softened
3 to 4 teaspoons milk
1/4 teaspoon almond extract

Steps:

  • Heat oven to 350°F. Spray 9-inch round or square pan with baking spray with flour.
  • In medium bowl, beat 3/4 cup milk, 1/2 cup melted butter, the vanilla, 1/2 teaspoon almond extract and the egg with wire whisk or spoon until well blended. Stir in flours, granulated sugar, baking powder and salt. Gently fold in raspberries. Spread in pan. Sprinkle almonds evenly over batter.
  • Bake 30 to 35 minutes or until top is light golden brown and toothpick inserted in center comes out clean. Cool 10 minutes.
  • In small bowl, mix glaze ingredients until smooth and thin enough to drizzle. Drizzle glaze over warm coffee cake.

1 cup fresh raspberry
3 tablespoons brown sugar
1 cup all-purpose flour
1/3 cup white sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda

1/2 cup sour cream
2 tablespoons butter or 2 tablespoons margarine, melted
1 teaspoon vanilla extract
1 egg, beaten
cooking spray
sliced almonds
1/4 cup sifted confectioners' sugar
1 teaspoon milk
1/4 teaspoon vanilla extract

Steps:

  • Combine raspberries and brown sugar in a bowl.
  • Set aside.
  • In a large bowl, combine flour, sugar, baking soda, baking powder, and salt.
  • Make a well in the flour mixture and add sour cream, butter or margarine, 1 teaspoon vanilla, and egg.
  • Stir just until moist.
  • Spoon 2/3 of the batter into the prepared 8 inch round cake pan with cooking spray.
  • Spread raspberry mixture evenly over the batter.
  • Spoon remaining batter into pan.
  • Top with almonds.
  • Bake for 40 minutes, in an 350 degree oven.
  • Or until a wooden pick inserted in center comes out clean.
  • Let cool for 10 minutes on a wire rack.
  • Invert onto a serving dish.
  • Combine confectioners' sugar, milk, and 1/4 teaspoon vanilla.
  • Stir well.
  • Drizzle glaze over cake.

½ teaspoon baking soda
¼ teaspoon salt
3 eggs
¼ cup butter, melted
¼ cup honey
1 tablespoon vanilla extract
½ cup raspberry jam
½ cup slivered almonds
½ cup confectioners' sugar
1 tablespoon milk
½ teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12x8-inch baking dish.
  • Stir almond flour, coconut flour, baking soda, and salt together in a bowl. Beat eggs, melted butter, honey, and vanilla extract together in a large bowl until smooth; add flour mixture and mix into a dough ball.

This is a recipe from my Mom and I've had to be a detective to figure out where she got it from. I think this one is from Cooking Light because it seems to be somewhat 'lightened'. The original recipe called for 2 T. of margarine but we don't use margarine in my house so I've replaced it with butter. Use the margarine if you wish (margarine has trans fats but I won't do the lecture).

1 cup fresh raspberry
3 tablespoons brown sugar
1 cup flour
1/3 cup sugar
1/2 teaspoon baking powder

Prepping the batter in a food processor makes it quick and easy to assemble. You can substitute different preserves - apricot, cherry and blueberry all work well.

2 ¼ cups all-purpose flour
¾ cup white sugar
¾ cup unsalted butter, cut into 1-inch pieces
½ teaspoon baking soda
½ teaspoon baking powder

¾ cup sour cream
1 teaspoon almond extract
1 egg
1 (8 ounce) package cream cheese, softened
¼ cup white sugar
1 egg
½ cup raspberry preserves
½ cup sliced almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch spring-form pan.
  • Combine flour, 3/4 cup sugar, and butter in a food processor; pulse until mixture resembles coarse crumbs. Remove 1 cup of mixture from food processor and set aside. To remaining mixture in processor add baking soda, baking powder, salt, sour cream, almond extract, and 1 egg; process until batter is just combined and smooth.   • Bake in preheated oven until filling is set and crust is deep golden brown, 45 to 55 minutes. Cool 15 minutes before removing side of pan. Chill completely before serving, about 1 hour.
