I love this recipe when time is short or I'm just not in the mood for a big evening meal. Using items directly from your pantry, you'll have dinner for 4-6 in a matter of minutes that everyone loves for a fraction of take-out.

1 pkg hidden valley ranch dressing mix
2 c left over cooked chicken, shredded (or rotisserie)
1 c sour cream
1/2 c salsa
4-6 flour or flavored tortillas, 10"
OPTIONAL FILLINGS:
black beans
refried beans
shredded lettuce
red pepper strips
mexican blend shredded cheese
red onion rings

Steps:

  • 1. Combine ranch dressing mix, chicken, sour cream and salsa in a sauce pan and heat thoroughly. Fill tortillas with chicken mixture and desired fillings. I like to set up a line of bowls filled with toppings and let everyone choose their own favorites.
  • 2. Serve with a basket of warm tortilla chips and remaining salsa.

I came up with this easy wrap while working at a deli during college. The combination of salsa and ranch adds a unique twist, and the chicken pieces are nice and tender.

Number Of Ingredients 9

4 tablespoons salsa
4 tablespoons prepared ranch salad dressing
4 tomato basil tortillas (10 inches), warmed
2 boneless skinless chicken breast halves (4 ounces each), grilled and cut into strips
12 slices cucumber
8 slices tomato
1/2 cup julienned green pepper
6 slices Swiss cheese
2 tablespoons butter, divided

Steps:

  • Spread 1 tablespoon of salsa and 1 tablespoon of ranch dressing over each tortilla. Place the chicken, cucumber, tomato and green pepper down each center; top with 1-1/2 slices of cheese. Fold ends of each tortilla over filling. , In a large skillet, melt 1 tablespoon butter. Place two wraps folded side down in skillet. Cook over medium heat for 3-4 minutes on each side or until lightly browned and cheese is melted. Repeat with remaining wraps and butter.
