Apple Pie '63 image

My mom used to make this recipe and it was always a welcome treat. I love it!

28 caramels, unwrapped
1/2 c half and half
CRUST:
2 1/2 c unbleached white flour
1/4 c sugar
1 1/2 tsp salt
1/2 c butter
1/4 c oil
1/4 c water
1 egg, beaten
APPLE FILLING:
6 c sliced, peeled apples (about 6)
1 c sugar
1/3 c flour
1-2 tsp grated lemon peel
2 Tbsp lemon juice
TOPPING:
8 oz package cream cheese, softened
1/3 c sugar
1 egg
1/3 c chopped nuts

Steps:

  • 1. Heat oven to 375*
  • 2. Heat all caramel sauce ingredients till caramels are melted. Keep warm.
  • 3. In large bowl, combine flour, sugar and salt. Cut in butter till coarse crumbs. Add oil, water and egg; mix well. Press into 15x10x1 baking pan.
  • 4. Combine all apple ingredients, toss lightly. Spoon into crust-lined pan. Drizzle warm caramel sauce over apples.
  • 5. Combine all topping ingredients into bowl; except nuts. Beat till smooth. Spoon over apples, spreading a little. Sprinkle with nuts. Bake at 375* for 35-45 minutes or till light golden brown.
