RAMEN SALAD



Ramen Salad image

A better, healthy version of the original Asian ramen salad with fresh ingredients. Ramen salad is a quick and easy favorite at any potluck!

1 package ramen noodles ((3 ounces))
2/3 cup sliced almonds
2 tablespoons sesame seeds
1 bag coleslaw mix ((16 ounces))
1 1/2 cups shelled frozen edamame (thawed)
1 cup shredded carrots
4 scallions (thinly sliced (both white and green parts))
1/2 cup canned mandarin orange segments in light syrup (rinsed and drained)
1/4 cup rice vinegar
3 tablespoons extra-virgin olive oil
2 tablespoons honey (substitute agave if vegan)
1 tablespoon low-sodium soy sauce
1/4 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Place a rack in the center of your oven and preheat the oven to 425 degrees F. Crumble the ramen noodles onto a baking sheet and spread them in a single layer along with the almonds. Bake for 5 minutes, remove from the oven, add the sesame seeds, and toss, then bake for 1 to 3 additional minutes until fragrant and golden. Watch closely so that the mixture does not burn. Set aside.
  • In a small bowl, briskly stir together all of the dressing ingredients: rice vinegar, olive oil, honey, soy sauce, salt, and pepper. (Alternatively, you can shake them together in a mason jar with a tight-fitting lid.)
  • In a serving bowl, toss together the coleslaw, edamame, carrots, scallions, and toasted ramen and almonds. Drizzle the dressing over the top, then toss again to combine. Sprinkle the oranges over the top, then refrigerate until ready to serve.

Sweet, tangy, crunchy ramen noodle and cabbage salad is a great side dish for potlucks or a weeknight dinner any day of the week.

2 tablespoons butter
3 ounce package ramen noodles, seasoning packet removed
1/2 cup slivered almonds
3 tablespoons sesame seeds
1 1/2 lbs Napa cabbage, about 8-10 cups shredded
1 bunch green onions, sliced thin, about 1/2 cup
1/2 cup light flavored olive oil
1/4 cup plain white vinegar
1/2 cup white sugar
2 tablespoons low-sodium soy sauce

Steps:

  • To make the dressing: Combine the oil, vinegar, sugar, and soy sauce in a jar and shake until the sugar has dissolved.
  • Melt the butter in a large skillet over medium heat. While the butter is melting, crush the ramen noodles while still inside the package. Remove the seasoning packet and throw away (or set aside for later use). Add the noodles, almonds, and sesame seeds to the melted butter in the skillet.
  • Saute while stirring frequently, until the noodle mixture is golden brown. Remove to a plate and let cool.
  • Shred the cabbage and combine the cabbage and onions in a large mixing bowl. Add the noodle mixture. Pour the dressing over the salad and toss well to combine. Serve immediately.

This light and crunchy salad is excellent with BBQ chicken. This recipe is from my mother-in-law and has been a family favorite for years.

2 (3 ounce) packages chicken-flavored ramen noodles, broken into pieces, seasoning packets reserved
½ cup raw sunflower seeds
½ cup slivered almonds
1 (16 ounce) package coleslaw mix
3 green onions, chopped
½ cup olive oil
3 tablespoons white vinegar
1 tablespoon white sugar
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread ramen noodles, sunflower seeds, and almonds onto a baking sheet.
  • Bake noodles, sunflower seeds, and almonds in the preheated oven until fragrant and toasted, 10 to 15 minutes. Cool to room temperature.
  • Combine coleslaw mix and green onions in a large bowl. Pour cooled noodle mixture over the top.
  • Whisk olive oil, reserved ramen seasoning packets, vinegar, sugar, and black pepper together in a bowl until dressing is smooth. Pour dressing over coleslaw and toss to coat.

Cheap, easy, cheesy tuna and noodles for college students on a shoe string budget. If you really wanna dress it up, you can add thinly sliced almonds or sunflower seeds for more flavor and texture. Of course this defeats the purpose of it being cheap and easy, but at least it's more enjoyable.

1 cup boiling water
1 (3 ounce) package any flavor ramen noodles
1 (3 ounce) can water-packed tuna, drained
2 slices American cheese

Steps:

  • Pour water into a microwave safe bowl, and cook in the microwave until very hot, about 2 minutes at high heat. Add ramen noodles, and microwave 2 minutes more to cook.
  • Drain and discard water from noodles, then stir in seasoning packet, tuna, and American cheese. Place back into microwave, and cook until hot, 1 to 2 minutes more. Stir before serving.

1 tablespoon plus 1/2 cup olive oil, divided
1/2 cup slivered almonds
1/2 cup sunflower kernels
2 packages (14 ounces each) coleslaw mix
12 green onions, chopped (about 1-1/2 cups)
1 medium sweet red pepper, chopped
1/3 cup cider vinegar
1/4 cup sugar
1/8 teaspoon pepper
2 packages (3 ounces each) chicken ramen noodles

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium heat. Add almonds and sunflower kernels; cook until toasted, about 4 minutes. Cool., In a large bowl, combine coleslaw mix, onions and red pepper. In a small bowl, whisk vinegar, sugar, pepper, contents of ramen seasoning packets and remaining oil. Pour over salad; toss to coat. Refrigerate until serving. Break noodles into small pieces. Just before serving, stir in noodles, almonds and sunflower kernels.

I came up with this mash-up of ingredients while studying abroad. Ramen and canned tuna were some of the cheapest foods I could get my hands on (especially because they could be mailed!). Everyone I've had try this has enjoyed it, and it definitely hits the spot!

1 (6 ounce) can tuna in vegetable oil
1 (3 ounce) packet ramen noodles, any flavor
1/2 cup frozen mixed vegetables

Steps:

  • heat a nonstick frying pan to about medium heat, and fry the tuna until hot and slightly crispy. You can use tuna in water, but it sticks less if you use tuna in oil.
  • At the same time, cook the ramen on the stove top and add the veggies to the pot as well.
  • Drain the ramen and veggies and add them to the frying pan with the tuna and continue to cook until the noodles become slightly sticky.
  • Pour the seasoning packet over the whole thing and mix.
  • Enjoy!

I'm the only one in the house that likes tuna noodle casserole so I used Ramen Noodles & came up with a great tasting,quick dish without a big pot of leftovers. This dish is so good that even my 'food-pickiest' dachshund "Hansel" loves it! Ramen is versatile. Go ahead, EXPERIMENT!

1 (3 ounce) package chicken-flavored ramen noodles or 1 (3 ounce) package creamy chicken-flavored ramen noodles
1 1/2 cups water (uses less than dirs.of 2C.so it won't be soupy)
1 (6 ounce) canned tuna
1 -3 tablespoon parmesan cheese
1 tablespoon butter
parsley flakes (optional)
black pepper (to taste)

Steps:

  • In deep cereal bowl, add water.
  • Break up the noodles before opening.
  • Add seasoning packet & noodles to water.
  • Microwave Hi 4-5 minutes. *Caution! HOT*
  • Add Tuna, Parmesan, Butter, Pepper.
  • Stir well.
  • Enjoy!
