APPLE RAISIN NUT SPICE CAKE

Around the Holidays ( Easter, Thanksgiving or Christmas ) this is one of my family's favorites. We hope you like it too!

Number Of Ingredients 15

1 cup all-purpose flour
2 cups wheat flour (or use 3 cups of All Purpose)
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons nutmeg
1 teaspoon allspice
1 1/2 cups sugar
2 large eggs
1/2 cup molasses or 1/2 cup dark corn syrup
1 cup applesauce
1/2 cup raisins (soak in Orange juice)
1 1/2 cups diced fuji apples
1/2 cup orange juice
1/2 cup chopped pecans (optional) or 1/2 cup walnuts (optional)

Steps:

  • Preheat oven to 375* next Grease and flour a Bundt pan.
  • Except for the Sugar, Sift Dry Ingredients together into a large mixing bowl. Add Sugar, beaten Eggs, Applesauce, Molasses, Orange juice, Raisins, Apples and Nuts. Batter should be thick.
  • Pour Batter into the bundt pan and Bake for 45 minutes or until toothpick inserted comes out clean.
  • Let cake cool, remove from pan and sprinkle with powdered sugar or make a glaze.

I loved the regular applesauce cake so much that I decided to go in search of an applesauce bundt cake!!

3 c flour
2 tsp baking soda
1 tsp cinnamon
1/2 tsp allspice, ground
2 stick butter, softened
1 c brown sugar
1 c sugar
1 egg
2 c applesauce
1 c chopped nuts (i used pecans, toasted if desired)
1 c raisins
RUM GLAZE
2 Tbsp butter
1 c powdered sugar
1/2 tsp rum flavoring
3-4 tsp milk

Steps:

  • 1. Heat oven to 350. Grease and flour (or spray) bundt pan generously.
  • 2. Combine flour, soda, cinnamon, and allspice. Set aside.
  • 3. In large bowl, mix together butter, brown sugar and sugar until creamy. Beat in egg. Add applesauce and mix until just combined. Add flour mixture one cup at a time until fully incorporated. Stir in raisins and nuts by hand.
  • 4. Spoon into bundt pan. Cook 60-70 minutes until wooden skewer inserted comes out clean. Cool in pan for about 10 minutes before removing.
  • 5. To make glaze, melt butter in microwave. Add all remaining ingredients, mixing well until smooth. Let cool slightly before spooning over cooled cake.

This is an old recipe that my grandma got off of a VB apple sauce can. She always iced it with plain boiled icing. If you can't find pastry flour, you can mix you own by combining cake flour and all-purpose flour in a ratio somewhere between two parts cake flour to one part all-purpose and one part cake flour to one part all-purpose.

1 cup strained hot applesauce
1/2 cup shortening
1 cup sugar
2 eggs
1 cup raisins
1/3 cup walnuts
2 cups pastry flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove

Steps:

  • First sift flour, spices and soda.
  • Then cream the shortening, add sugar gradually and eggs well beaten.
  • Add flour and spices alternately with the applesauce and beat throughly until smooth.
  • Dust raisins and nuts lightly with flour and stir in last.
  • Bake in a shallow, well greased pan about an hour in a 325 degree oven.
  • Ice with your choice or icing or frosting.

1 ½ cups white sugar
1 cup butter
¼ teaspoon salt
1 ½ teaspoons baking powder
½ cup chopped walnuts
4 eggs
½ cup raisins
½ cup orange juice
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour one 10 inch bundt pan.
  • In a small bowl, mix flour, salt and baking powder. In another small bowl, mix the chopped nuts and raisins and coat them together with about 1 tablespoon of flour. This is to ensure that the nuts and raisins do not sink to the bottom of the cake while it is baking.
  • In a large bowl, cream together the sugar and the butter or margarine. Add the eggs one at a time and beat for 1-2 minutes at low speed. Stir in the vanilla extract. Add the flour mixture and the orange juice alternately to the butter mixture and beat until everything is mixed thoroughly. Mix the nuts and raisins mixture into the batter. Pour the batter into a greased and floured 10 inch bundt pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour or until a toothpick inserted in the center comes out clean. Let cake cool before slicing and serving.

2/3 c butter
1 c brown sugar.......( or 1/2 cup sugar)
1/2 c molasses............(light or dark)
2 eggs.....beaten
1 c sour milk............(or butter milk)
1 tsp baking soda
2-1/2 c flour
2 tsp baking powder
1-1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 c walnuts..............(coarsely chopped)
1-1/2 c sun-maid raisins.........(cut in pieces)

Steps:

  • 1. Cream butter with brown sugar, then add molasses, beaten eggs and sour milk which the baking soda has been dissolved in.
  • 2. mix and sift the flour, baking powder, cinnamon and cloves. Add to this dry mixture, the raisins (cut in pieces) and the walnuts (coarsely chopped). Then combine these dry ingredients with the first mixture.
  • 3. Bake in three (greased and floured layer cake pans. Use square or round cake pans. Bake in a moderate 375 oven. for 25 minutes. Cover (cooled layers) generously with your favorite vanilla icing,or see note below. Then stack the layers..... Grandma never frosted the sides!...... Serve and enjoy.

Steps:

  • Sieve flour salt and baking powder together.
  • In a separate bowl, mix chopped nuts and raisins. Coat them together with a tsp of flour to avoid them sinking to the bottom of the cake pan.
  • In a large bowl, cream butter and sugar. Add eggs one at a time; beat for 1-2 minutes on a slow speed mixer.
  • Stir in vanilla.
  • Add the flour mixture to the butter mixture alternating with the orange juice.
  • Mix well.
  • Add nuts and raisins; mix with a wooden spoon.
  • Pour in greased dish and bake at 175°c for about 60 minutes.
  • Let cool well before serving
  • (My cake usually cooks even before one hour and at times takes longer to brown, however keep checking and don't overcook or else it would loose its moistness).

There are many versions of the Bara Brith, as many perhaps, as there are Welsh cooks. It is basically a spicy raisin cake, deep, dark and delicious. This cake is a bit unorthodox, but very moist and fruity.

1 1/4 cups butter
1 1/4 cups brewed tea
1 (14 ounce) can sweetened condensed milk (NOT Evaporated)
1 cup golden raisin
1 cup black currants
1 cup chopped dates
1 1/4 cups all-purpose flour
1 1/4 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1 cup chopped walnuts
2 tablespoons apricot jam

Steps:

  • In a saucepan, heat together first 6 ingredients and allow mixture to simmer for a minute or 2, or until nicely blended and raisins are plumped.
  • Allow to COOL for 30 minutes.
  • Mix together and stir in the next 8 ingredients until dry ingredients are just moistened.
  • Do not overmix.
  • Stir in the apricot jam.
  • Scrape batter into a greased 10-inch springform pan and bake in a 325°F.
  • oven for about 1 hour and 20 minutes or until a cake tester, inserted in center, comes out clean.
  • (Tent pan loosely with foil if top is browning too rapidly.) Allow to cool in pan, and then cover tightly with plastic wrap and store cake in the refrigerator.
  • NOTE:- This cake is not very sweet, more like a dark raisin bread.

1 cup raisins
1 cup miniature marshmallows
1 package chocolate cake mix (regular size)
4 eggs
1 cup mayonnaise
1 cup water

Steps:

  • In a small bowl, combine the walnuts, raisins and marshmallows; set aside. In a large bowl, combine cake mix, eggs, mayonnaise and water. Beat on low speed for 30 seconds. Beat on medium for 2 minutes. Stir in nut mixture., Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

  • 1. mix all ingredants together
  • 2. place in greased bundt pan
  • 3. bake @ 225 degrees for about 2 hours or until done. (do the toothpick test)
