Easy & delicious idea for a last minute breakfast potluck or holiday gift. It looks beautiful, too. I'm not sure where this recipe came from, but it could have originally been from a cereal box. Post Raisin Bran has the biggest flakes, which makes it look especially pretty for presentation, but any raisin bran cereal will do....

Number Of Ingredients 11

4 Tbsp butter or margarine, divided into 2 + 2 tablespoons
2 c raisin bran cereal, divided into 1-1/2 + 1/2 cup
1 1/4 c milk
1 egg
3/4 c white sugar
2 c all-purpose flour
1 Tbsp baking powder
1/2 tsp ground cinnamon, see step #11
1/2 c chopped walnuts, optional
1 Tbsp white sugar
some walnut halves for decorating, optional

Steps:

  • 1. Preheat oven to 350 degrees F. Spray cooking spray in 9 x 5 loaf pan.
  • 2. Melt 2 Tablespoons of butter or margarine in a medium microwave-safe bowl. (I love my large PC Batter Bowl for this!) Stir in 1 1/2 cups of the cereal and milk until blended. Let stand 1 minute.
  • 3. Add egg and 3/4 cup sugar, mixing well with a large spoon.
  • 4. Stir in flour, baking powder, and cinnamon until well-blended.
  • 5. Mix in the chopped walnuts, if desired.
  • 6. Spread into prepared loaf pan.
  • 7. FOR THE TOPPING: Melt the remaining 2 Tablespoons of butter or margarine in a small microwave-safe bowl. (I use my small PC Batter Bowl for this.) Stir in the remaining 1/2 cup cereal and 1 Tablespoon sugar until well-blended. Sprinkle over batter.
  • 8. Gently press topping and walnut halves into the batter.
  • 9. Bake 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes in pan on wire rack, then remove bread from pan and cool completely...
  • 10. ...OR serve warm with butter or cream cheese. =^..^=
  • 11. OPTION: In place of cinnamon, add 1 tsp. vanilla extract with the milk in Step #2.

I like store bought cinnamon raisin bread for breakfast, so I started making this to save some dough. Get it, dough? Hahaha...heh. 1.5 lb loaf, from my fave bread book. I think I will add more cinnamon in the future, though this bread is OMG delicious when you spread butter on top and sprinkle a mixture of cinnamon sugar on top, then microwave it for 10-30 seconds. Mmm calories taste so good!

1 cup water
2 tablespoons butter
3 cups white bread flour
2 tablespoons dry milk
1 1/2 tablespoons sugar
1 1/2 teaspoons salt
1 teaspoon cinnamon
1 cup raisins
2 teaspoons fast rise yeast or 3 teaspoons active dry yeast

Steps:

  • Place ingredients into bread pan in the order suggested by your bread machine manufacturer. I put the raisins in after the beep or after the first knead to avoid the bread machine going all HULK SMASH! on them, but it is up to you.
  • Oh yeah, bake on white.

This bread is moist and very good. Use in a bread machine. You will love it. I got the recipe from my daughter-in-law. She makes a loaf at least 3 times a week. Her family of 7 eats it like there is no tomorrow. Give it a try, you will enjoy it.

1 c water
2 Tbsp soft butter
4-6 Tbsp brown sugar
1/4 tsp baking soda
1/2 tsp salt
1 c raisin bran cereal
2 c bread flour
2 tsp yeast
1/2-1 c raisins

Steps:

  • 1. Place first 8 ingredients into bread machine. Set machine to large loaf, medium brown.
  • 2. At first beep and bread has kneaded place in the raisins. Let the machine cook on it's own. Approximate time is 2hrs and 40 minutes. Take bread out of machine after baking. Let cool before cutting. Enjoy
