Delicious Raisin Bran Muffins are easy to make breakfast muffins made with the classic raisin bran cereal we all know and love! The tasty cinnamon muffin surrounds bran flakes and tender bites of raisin and is absolutely perfect with a touch of honey or pat of butter!

2 cups Raisin Bran
1 cup milk
1 large egg ((beaten, at room temperature) )
1/4 cup unsalted butter ((melted and cooled - or use cooking oil))
1 cup all-purpose flour
2 1/2 tsp baking powder
1/4 cup sugar
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp ground cinnamon ((optional))

Steps:

  • Preheat your oven to 350 degrees F (175 degrees C) and line a muffin tin with paper muffin liners or coat with non-stick cooking spray.
  • In a large mixing bowl, combine the dry ingredients including all-purpose flour, baking powder, salt, sugar, and cinnamon.
  • Make a well in the center of the dry ingredients and add the cooled, melted butter, milk, egg, and vanilla extract.
  • Mix the ingredients just enough to incorporate the dry flour into the wet ingredients.
  • Add the raisin bran cereal, stir to combine. Allow the muffin batter to sit for up to 45 minutes if you want the bran flakes to take on the moisture from the batter. *These muffins are the only time I will ever argue that soggy cereal is best!
  • Portion the muffin batter out into your prepared muffin tin, filling each muffin liner between 3/4 and full. Bake at 350 degrees F (175 degrees C) for 16-18 minutes, or until an inserted toothpick comes out clean.
  • Remove the baked muffins and allow to cool in the muffin pan for 10 minutes. Serve warm for best results.

  • mix! I'm not sure if this even constitutes as a recipe, but is the simplest and one of the tastiest breakfasts I've had. and I don't like raisins. But the raisins balance the yogurt really well.

1 stick (1/2 cup) unsalted butter, softened
1/4 cup firmly packed light brown sugar
1 large egg, beaten lightly
1 cup sour cream
1/4 cup dark molasses
1/2 cup raisins
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup miller's bran (available at natural foods stores, specialty foods shops, and some supermarkets)

Steps:

  • In a large bowl with an electric mixer cream together the butter and the brown sugar until the mixture is light and fluffy, beat in the egg, the sour cream, and the molasses, and stir in the raisins. In a bowl whisk together the flour, the baking soda, the salt, and the bran, add the mixture to the sour cream mixture, and stir the batter until it is just combined. (The batter will be lumpy.) Spoon the batter into 12 well-buttered 1/3-cup muffin tins and bake the muffins in the middle of a preheated 400°F. oven for 15 to 20 minutes, or until they are golden brown and springy to the touch. Turn the muffins out onto a rack and let them cool.

⅓ cup molasses
1 cup raisins
½ cup wheat germ
1 cup quick cooking oats
3 tablespoons butter, melted
1 ½ cups whole wheat flour
1 ¼ teaspoons baking soda
1 teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground cloves
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups.
  • Beat together the yogurt, egg, molasses, raisins, wheat germ, oats, and butter in a large bowl until evenly mixed. Sift the flour, baking soda, cinnamon, ginger, cloves, and salt on top of the molasses mixture. Fold the flour mixture into the molasses until a batter has formed. Pour batter into muffin cups, filling to the top.
  • Bake in preheated oven until a toothpick inserted into the middle of a muffin comes out clean, about 25 minutes.

2 cups plain yogurt
1 1/2 cups brown sugar
1 cup oil
2 teaspoons vanilla
4 teaspoons baking powder
2 teaspoons baking soda
2 eggs
2 cups natural bran
2 cups flour
1/2 teaspoon salt
1 cup raisins or 1 cup peanuts (optional)

Steps:

  • Preheat the oven to 350 degrees.
  • Measure the yogurt into a large bowl and mix in baking soda.
  • Set aside.
  • This mixture will expand so it is important to use a large bowl.
  • In a large mixing bowl, beat together the brown sugar, eggs and oil.
  • Add the bran and vanilla.
  • Sift together the flour, baking powder and salt.
