- Take 7 wooden skewers and thread the following fruit onto each - 1 raspberry, 1 hulled strawberry, 1 tangerine segment, 1 cube of peeled mango, 1 chunk of peeled pineapple, 1 chunk of peeled kiwi, 1 green and 1 red grape, and finish off with 2 blueberries. Arrange in a rainbow shape and let everyone help themselves.

- Cut the kiwi and orange crosswise into 4 rounds, then cut each round into 3 pieces, so you end up with 12 pieces of each fruit. To prepare the skewers, put 2 blueberries about 1/3 of the way down the skewer, add a piece of kiwi, a pineapple chunk, a piece of orange, and top with a chocolate dipped strawberry.;
- Line a tray with waxed paper. Break up the chocolate into small pieces and place about two thirds of it into the bowl of a double boiler over barely simmering water. Make sure that the bottom of the bowl does not touch the water. Stir occasionally, very gently, until the chocolate has melted, about 1 minute. Remove the bowl from the double boiler and add the rest of the chocolate, stirring gently until it has melted. Dip the strawberries in the chocolate, place on the waxed paper and chill in the refrigerator for 15 minutes until chocolate is set.

- Choose one fruit for each color of the rainbow (red, orange, yellow, green, blue, purple). Peel citrus fruits with a knife and cut into 1- inch cubes. Leave berries whole. String 1 fruit from each color onto the skewer in rainbow order. Repeat this until you have 8 fruit skewers.
- Note: This recipe is very adaptable. The above are only suggestions. I encourage people to get creative with other fruits, especially substituting ones that are fresh and in season, keeping to a rainbow pattern!

- Layer each skewer with fruit, starting with a marshmallow pushed all the way to the end. Follow that with one blackberry, two blueberries, one kiwi round, one pineapple cube, one cantaloupe cube and finish with one strawberry.
