Crock Pot White Chicken Chili image

Adjust heat by changing the amount of peppers. Can also be cooked on the stove.

Number Of Ingredients 15

2 split chicken breasts, cooked and chopped**
1 Tbsp olive oil
1 large onion, chopped
3 clove garlic, minced
1/2 c chopped jalapeno peppers (use one or more serrano peppers for more heat)
1 4-oz. can(s) chopped green chile peppers
2 tsp cumin
1 tsp dried oregano
1/2 tsp cayenne pepper
1 tsp onion & herb seasoning blend (mrs. dash)
1 c chicken broth (may add up to a cup more if cooking on stove top)
3 can(s) great northern beans, undrained
1 1/2 c frozen corn
shredded cheese for serving
** can also use 1 lb. ground chicken breast

Steps:

  • 1. Cook chicken breasts, remove meat from bones and chop. (Reserve broth from cooking for use later in the recipe.)
  • 2. In a medium pan, sauté onions, garlic and jalapenos in olive oil until soft.
  • 3. Mash or puree one can of the beans. Place pureed beans in crock pot. Add the other two cans of beans.
  • 4. Stir in onion, garlic and peppers. Stir in the rest of the ingredients, adding chicken and corn last.
  • 5. Cook on low for 4 hours. Serve with shredded cheese.
