TUNA CHEESE SPREAD
This is really delicious, especially if you are low-carbing it. It's a great alternative to "plain" tuna salad. Can be used as a dip for celery sticks, spread on celery stalks, or stuffed in cherry tomatoes. Prep time does not include chill time, since you can leave it in the fridge for longer than the one hour mentioned in the recipe.

Steps:
- Soften the cream cheese for about 1 hour.
- (I usually just give it a whirl in the microwave for about 20 seconds) Drain the tuna, mash with a fork.
- Combine the cream cheese, tuna and mayo.
- Add the lemon juice, curry and salt.
- Mix to blend well.
- Add the onions and stir to blend.
- Chill for 1 hour for the flavors to blend.

- Whip cream cheese in a bowl with an electric hand mixer. Add onion, capers, lemon zest and juice, seafood seasoning, parsley, Worcestershire, and hot sauce. Mix well. Add tuna and mix until well blended.
- Refrigerate for 2 hours, or up to overnight.

- 1. Lets get all ingredients together...forgot the 2 cans of Tuna in picture!
- 2. Get a medium size mixing bowl and open the mushroom soup and add...
- 3. put in the 2 cans of tuna...
- 4. put in the 1/2 cup of mayo, add the 4ozs of cream cheese and 1/2 cup of sour cream.
- 5. Chop up onion fine,
- 6. and add 2 tbs of onion and 1 tsp pepper and 1/2 tsp of sea salt or to taste.
- 7. Take and grate your Colby cheese (you could us shredded Colby), and place 4ozs of cheese to tuna. Safe enough cheese for top...
- 8. and mix all ingredients well. Add to a medium size pan.
- 9. Heat on low to medium, stirring occasionally until cheese has melted, about 15 minutes.
- 10. Pour into a container and let cool for about 15 minutes. Cover and place in the refrigerator for 2 hours or more.
- 11. When ready for party, grate or put shredded cheese on top. Serve with Fritos Scoops, Tortilla Scoops, crackers or celery...ENJOY!!!

RACHEL'S TUNA SPREAD & DIP
Before we moved I had a family of Amish for neighbors...Rachel was the mother of this lovely family...she shared so many Amish recipes with me, and this is one I tweaked, not because it wasn't good, just missing something...so this is my version, which she even agreed was tastier...sure miss them and their home made bread she used to send me, for the use of our phone... This recipe can be used as a dip or for sandwiches...I made pinwheels out of it for lunch...very versatile...enjoy!

- You can easily double this recipe for a party or to use as a spread for mini pinwheels. I make wraps with spinach as illustrated. It's a very versatile spread.
