- In a bowl, combine the water, yeast and sugar. Let stand for 5 minutes.
- In another bowl, combine the flour and salt. Add the yeast mixture and stir with fork until a soft dough forms. Add a little flour if necessary.
- Knead for 1 minute in the bowl while adding flour to prevent sticking.
- Cover with a clean cloth. Let the dough rise for about 30 minutes in a warm place, away from drafts (in the microwave oven, for example).
- On a floured surface, roll out the dough in two 20 cm (8 in) in diameter discs.
- In a cast iron skillet, heat half the butter and cook one bread over medium heat for about 3 minutes on each side. Repeat with the remaining butter and bread. Cut into wedges and serve hot.
QUICK SKILLET BREAD
I just tried this recipe yesterday and it was great! Its from a food friend named Knoxcop. She is a master baker, so I knew the recipe would be delicious! This bread would be perfect to use with biscuits and gravy! You can add any topping you like! I added crispy fried smoked pork pieces!

- 1. In a heavy 12 inch skillet (prefer non stick) heat 1 tablespoon of your fat.
- 2. Sift flour, soda and salt together.
- 3. Quickly stir in buttermilk until just moistened.
- 4. Place batter into the melted fat, spreading batter across pan.
- 5. Place lid onto skillet.
- 6. Cook bread, covered, over low to med heat for about 10-12 minutes.
- 7. Lift one side of the bread gently, with large turner, and flip. But add remaining Tbls. of oil to skillet before the flip.
- 8. This is when you add your toppings if desired!
- 9. Continue to cook other side for 10-12 minutes,
- 10. Cut into wedges and serve.
