2 tablespoons sugar
1/4 cup extra-virgin olive oil, plus more for bowl and brushing
2 teaspoons kosher salt
4 cups unbleached all-purpose flour (spooned and leveled), plus more for dusting

Steps:

  • Pour 1 1/2 cups warm water into a large bowl; sprinkle with yeast and let stand until foamy, about 5 minutes.
  • Whisk sugar, oil, and salt into yeast mixture. Add flour and stir until a sticky dough forms. Transfer dough to an oiled bowl and brush top with oil. Cover bowl with plastic wrap and set aside in a warm, draft-free place until dough has doubled in bulk, about 1 hour. Turn out onto a lightly floured surface and gently knead 1 or 2 times before using.
  • Dough can be stored in an oiled bowl, covered with plastic, in refrigerator up to 2 hours. To freeze, wrap dough in plastic and freeze in a resealable freezer bag up to 3 months. If you plan to use it in a recipe that calls for half a batch, divide it before freezing.

1 tablespoon yeast
1/4 teaspoon salt
1 tablespoon sugar
2/3 cup lukewarm water (plus an additional 2 tbsp)

Steps:

  • Mix 1 cup of flour with all other ingredients.
  • Gradually add 2nd cup of flour until it forms a ball. Use your hands to form and knead the dough.
  • Let the dough rest 10-15 minutes in a bowl covered with a dish towel or saran to keep it warm.
  • Spread out onto greased pizza pan and top with your favorite toppings.
  • Bake at 375 degrees for approximately 15 minutes. Enjoy!

  • Mix yeast in warm water until dissolved.

You can easily double it and still use the KitchenAid to mix and knead it. For a change of taste, change the flour to 1 1/2 cups all-purpose and 1 cup whole wheat.

1 tablespoon fast-rising active dry yeast
1 teaspoon salt
1 cup hot water (not boiling)

  • In a large bowl, combine 1 1/2 cups of flour with yeast and salt.
  • Pour hot water and oil into flour mixture and mix well.

The beer adds just a hint of fragrence and flavor in this quick pizza dough. We found this great recipe in the King Arthur Catalog. Another great one from King Arthur Flour. We modified it a bit to match the things we have in our pantry. Please note that the prep time includes the rising time for the dough.

4 cups flour
2 teaspoons instant yeast
1 teaspoon baking powder
1 1/2 teaspoons salt
2 tablespoons olive oil
1 1/2 cups room-temperature beer

Steps:

  • Mix and knead together all the ingredients - by hand, mixer or bread machine - until you've made a smooth, soft dough. Cover the dough, and allow it to rise for 30 minutes or up to 2 hours.
  • Preheat the oven to 500F with a pizza stone (if you are using one) on a lower rack.
  • Divide the dough in half. Shape each half into a 10" to 12" round.
  • Place the rounds on parchment paper, if you're going to use a pizza stone. Or place the dough on a lightly greased or parchment-lined baking sheet.
  • Transfer the pizzas, parchment and all to the baking stone. Or place the pans in the oven. Bake for 3 to 4 minutes. Remove from the oven, top as desired, and bake for an additional 15 to 20 minutes, until the bottom crust is crisp and the cheese is bubbly and browned.

3 cups all-purpose flour (approximately)
1 cup whole wheat flour
2 tablespoons kosher salt

Steps:

  • Dissolve yeast in 1 cup of water, stir in olive oil and set aside.
  • Combine the all-purpose flour with whole-wheat flour and salt in a food processor. Process with steel knife blade for a few seconds to blend. With processor running, slowly pour yeast mixture through the feed tube and continue to process until a firm, smooth and elastic ball of dough forms. If the mixture is too dry to cohere, you may have to add another tablespoon or so of warm water. If it is too soft, add a little more all-purpose flour.
  • Remove dough from processor and wrap in plastic. Refrigerate for at least 10 minutes or up to one day.

1 tablespoon honey
1 teaspoon olive oil (or more as needed)
2 teaspoons dry yeast
1/2 cup whole wheat flour

1 1/2 cups unbleached all-purpose flour
cornmeal

Steps:

  • Place the warm water, honey, and olive oil in a cup and sprinkle with the yeast.
  • Let stand for 10 minutes Place the whole wheat flour, salt, and 1 cup of all purpose flour in a food processor.
  • Process for about 10 seconds, or until combined.
  • Add the yeast mixture, pulsing to combine.
  • Add enough of the remaining flour to form a soft, slightly moist dough.
  • If the mixture is too sticky, sprinkle with a little more flour and process it in; if it is too dry, add a little more water.

  • Sift flour into a large mixing bowl, create a well in the middle.

1/4 cup wine (light red or white, rose wines also work well)
3/4 cup water
1 (1/4 ounce) packet dry yeast
1 tablespoon honey

1 tablespoon olive oil
3 cups flour

Steps:

  • Heat wine and water together in a small pot until they reach 110 degrees F.
  • In a large bowl, dissolve yeast in water/wine mixture and allow to proof for 5 minutes (if you're using instant yeast skip the mini-proof and move immediately to step 3).
  • Add 1 cup of the flour, the honey, the salt, and the olive oil to the yeast mixture and stir until a loose batter forms.
