This turns an average grocerty store bought steak into a good restaurant tasting steak. It takes only minutes to prepare and marinade can be for 30 minutes to overnight. Ooh, so good!

1/4 cup soy sauce
2 tablespoons Worcestershire sauce
3 tablespoons minced garlic, from jar is fine
1 teaspoon garlic powder
1/2 teaspoon onion powder

Steps:

  • Mix it all together and marinade steak for 30 minutes to overnight.
  • Garlic will be stronger the longer you marinade.
  • Don't be afraid of the garlic it makes the steak taste wonderful!
  • Either grill the steaks or pan fry them in butter.
  • Either way they're great!
  • I do both; I grill them til they're almost done then finish the cooking by pan frying.
  • This turns an average grocery store steak into a delicious good restaurant tasting steak.

"DRUNKEN SHRIMP STYLE" QUICK MARINADE

1 cup vodka
1 cup citrus juice made from freshly squeezed orange, lime, and lemon juice
1/4 cup peeled ginger, chopped
1/2 clove garlic, finely minced
Sugar, to taste
1 cup miso paste
1/2 cup light cooking oil, preferably sesame, canola, or vegetable
1 pound small shrimp, rinsed, shells intact
1/2 pound bay scallops

Steps:

  • Soak skewers in water for 45 minutes. In a mixing bowl, combine vodka, citrus, ginger, garlic, sugar, and miso paste and whisk until mixed. Slowly whisk in oil until smooth. Pour marinade over unpeeled shrimp and scallops. Cover and let marinate in refrigerator for 45 to 60 minutes. Skewer shrimp and scallops (4 to a skewer is optimal) and place on grill over direct heat. Allow tails and legs of shrimp to slightly blacken before turning. Scallops should brown slightly before turning.

1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
3/4 teaspoon salt
3/4 teaspoon ground black pepper
1 tablespoon olive oil
1/3 cup white wine
4 -6 chicken breasts

Steps:

  • Combine all ingredients except the chicken in a large Ziploc bag and mix.
  • When all ingredients are well combined, add chicken breasts.
  • Marinate in refrigerator for 20-30 minutes, no longer then that.
  • When ready to cook, brush BBQ with oil and cook chicken until no longer pink inside.
  • Throw out the Ziploc bag and marinade.
  • Serve over pasta with a red sauce or on it's own with a salad.

This is a quick-and-easy marinade recipe for steaks.

2 (8 ounce) boneless rib-eye steaks
salt and ground black pepper to taste
1 pinch garlic powder, or to taste
1 pinch Montreal steak seasoning, or to taste
⅓ cup extra virgin olive oil
⅓ cup Worcestershire sauce
⅓ cup soy sauce
⅓ cup balsamic vinegar
3 tablespoons Dijon mustard
3 cloves garlic, chopped
1 dash liquid smoke flavoring

Steps:

  • Place steaks in a flat baking dish or container. Cut slits at 1-inch intervals in the fat around the edges of the steaks. Gently pierce both sides of each steak a few times with a fork.
  • Sprinkle each steak with salt, pepper, garlic powder, and Montreal steak seasoning. Pat seasonings into steaks.
  • Whisk olive oil, Worcestershire sauce, soy sauce, balsamic vinegar, Dijon mustard, garlic, and liquid smoke together in a bowl. Pour marinade over steaks to coat. Cover container or baking dish with plastic wrap and marinate steaks in the refrigerator for 2 hours. Turn steaks over and marinate for another 2 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Cook the steaks on the preheated grill until they start to firm, and are reddish-pink and juicy in the center, 8 to 10 minutes per side for medium-rare. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).

  • 1. Toast the cumin and coriander seeds in a dry skillet until they become fragrant.

This is a method to speed up any refrigerated marinade time given in a recipe if time is short. You don't need a specific marinade...anything with a liquid base works good but it is best if the marinade includes either, vinegar, lemon juice or wine. All three of these ingredients tenderize the meat and help to fuse the flavors of the seasonings together. The heat generated forces the marinade into the meat quickly.

3 -4 lbs meat

Steps:

  • Lay your meat in a single layer in the bottom of a large glass baking dish.
  • Pour the marinade over the meat.
  • Microwave on 'high' for 5 minutes.
  • Let meat sit in microwave for 15 minutes.
  • Turn meat over and repeat steps 3 and 4.
  • Proceed with recipe instructions as if you had refrigerated the meat for hours.
