QUICK CHOCOLATE GANACHE
Use this recipe to make our Inside-Out German Chocolate torte. This ganache thickens as it sits; it should be pourable but thick enough to fully coat the cake.

Steps:
- Chop chocolate finely using a serrated knife; place in a large heat-proof bowl.
- Bring cream to a boil over medium-high heat; pour directly over chopped chocolate. Allow to sit 10 minutes. Use a rubber spatula to gently stir chocolate and cream until well combined and smooth. Let sit at room temperature until cooled and just thickened, stirring occasionally, about 30 minutes, but up to an hour depending on the temperature of the room.
QUICK AND EASY CHOCOLATE GANACHE
i love to dip the tops of my cupcakes in this...it's even better than frosting, and makes me feel like i've made something gourmet and decadent.

Steps:
- in a microwave safe bowl, combine two cups semi-sweet chocolate chips (if you prefer, use milk chocolate or dark chocolate) and 1 cup heavy cream. give it a little stir.
- microwave for two minutes, stirring at 30 second intervals.
- if nessesary, microwave the mixture longer, at ten second intervals. you don't want to burn this! ( i had to microwave for a total of two and a half minutes)
- drizzle on bite size pieces of cake, fruit, dip cupcake tops into it, or refridgerate until firm, roll into balls and sprinkle with cocoa or roll in nuts. or eat it with a spoon. just enjoy!
