Feta & Shrimp

OK, technically this is not ceviche since we cooked the shrimp. But the beautiful presentation and citrusy flavor is ceviche-like.

Yield 8 servings, 1/2 cup each

Number Of Ingredients 7

1/2 cup each fresh lime and orange juice
1/4 cup KRAFT Zesty Italian Dressing
1/4 cup chopped fresh cilantro
1 lb. cooked cleaned medium shrimp
1/2 cup thin matchlike jicama sticks
1/4 cup slivered red onions
1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese

Steps:

  • Whisk lime juice, orange juice, dressing and cilantro until blended. Add to shrimp in large bowl; toss to evenly coat shrimp.
  • Add remaining ingredients; mix lightly.
  • Refrigerate 30 min.
