This recipe was given to me by an Irish friend whom I met when we were living in Germany (the Irish and German factor explains the 'beer' ingredient). Very quick and easy to make - just mix the ingredients and put straight in the oven. My friend noted that dark beer works best. I like to sprinkle white and black sesame seeds on the bread, as it gives it that extra taste.

Number Of Ingredients 6

3 cups plain flour
3 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
325 ml beer, at room temperature (1 bottle, dark beer works best)
sesame seeds, black sesame seeds, poppy seeds, sunflower seeds, etc

Steps:

  • Mix dry ingredients.
  • Add beer all at once (it foams a lot).
  • Stir until just mixed.
  • Put in a greased loaf pan. (Optional: Sprinkle bottom of pan with seeds of choice after greasing; then place dough in pan and sprinkle once again).
  • Bake at 190oC (375oF) for 35-40 minutes.

2 pkg yeast or 1 1/2 tablespoons
1/4 c warm water, 115 degrees approx
2 Tbsp butter
2 Tbsp honey
3/4 c beer
1 1/4 c rye flour
2 1/4 c ap or bread flour
1 tsp sea salt
1 tsp garlic powder
1 tsp caraway seeds, optional

Steps:

  • 1. In large mixing bowl, add yeast and warm water, stir and allow to foam, 10 minutes. While yeast is working, in a small saucepan, add butter, honey, beer and heat until butter is melted. Remove from heat, allow to cool to 105-120 degrees, then add to yeast mixture.
  • 2. Add rye flour, AP flour, salt, garlic and caraway seeds, if desired. Mix well and knead with dough hook 4-5 minutes, adding 1/4 c flour as needed to make a soft but firm dough. It will completely pull away from the sides of the bowl forming a ball.
  • 3. Form dough into a round disk shape and place into a greased 8" round pan. Or as I did, you can place into a greased loaf pan. Cover with plastic wrap then a towel and allow to rise in warm place until doubled, about 45 minutes. Preheat oven to 375 and bake 30 minutes, or when thermometer reads 165-175. Brush top with melted butter if desired. Cool on racks 10 minutes then remove from pan to racks
  • 4. ***This bread only rises once in the pans. ***I made a double batch as to use up the full bottle of beer. (hence the 2 loaves in the photo) ***I used an amber beer, but any beer should work

3 cups flour
1 tablespoon baking powder
1 package onion soup mix
1 tablespoon dried basil
1/2 teaspoon garlic powder
2 teaspoons light brown sugar
1 cup grated sharp cheddar cheese
1 fresh green onion, chopped
1 (10 ounce) bottle beer, un-chilled
1 fresh green onion, chopped
2 tablespoons parmesan cheese
1/4 cup grated sharp cheddar cheese

Steps:

  • Preheat oven to 350 degrees F.
  • Using a cheese grater with small holes, grate the two portions of sharp cheddar cheese.
  • In a large bowl combine together the flour, baking powder, onion soup mix, basil, garlic powder, and sugar; stir in the grated cheese and chopped green onion.
  • Gradually pour in the beer, stirring with a fork until just blended and beer is incorporated.
  • Grease the bottom of a 9"x5" loaf pan and spread the dough in the pan.
  • Chop the additional green onion and sprinkle evenly over the surface of bread dough for topping (you can substitute chopped thinly sliced yellow onion for this, if you like).
  • Bake at 350 degrees for 50 to 55 minutes or until a cake tester comes out clean from the middle.
  • Remove bread from oven; combine the Parmesan and grated cheddar, and sprinkle it over the top of the still-hot loaf.
  • Let the bread stand in the pan for 10 minutes on a wire rack, then turn out and let cool for another 5 or so minutes before slicing and/or serving.
  • You can make this bread ahead of time- if you're going to serve it later, wrap it in foil and at the time of serving re-heat it in a 325 degree oven for about 15 minutes; it's really very tasty the day after it's prepared, so you might consider making it a day ahead of when you want to serve it.
