This is a white dipping sauce served in many restaurants with chips or hot flour tortillas for dipping. This is a basic recipe that uses '"jack" for the Tex-Mex version and chihuahua and/or asadero for the more traditional Mexican version.

1 cup asadero cheese or 1 cup chihuahua cheese, shredded fine
4 ounces green chilies
1/4 cup half-and-half
2 tablespoons onions, chopped fine
2 teaspoons ground cumin
1/2 teaspoon salt
1 serrano pepper, chopped fine (optional)
1 tablespoon fresh cilantro, chopped fine (optional)

Steps:

  • Put all ingredients in a double boiler and heat on medium.
  • Cook until melted and well blended, stirring occasionally.
  • Serve with fresh tostadas or hot flour tortillas.

I've come very close in recreating that scrumptious white sauce served at one of our favorite Mexican restaurants El San Jose!!!

1 1/4 lbs white American cheese, cut into 1-inch cubes
1/4 cup diced green chilis
2 pickled jalapeno peppers, chopped
1 ounce pickled jalapeno juice
2/3 cup whole milk
1/2 cup cold water
cayenne pepper (optional)

Steps:

  • Toss all ingredients into a large microwave-safe bowl. Microwave on high for 5 minutes, stopping to stir after every minute. The mixture might seem watery during the first few stirs, but should come together as a nice runny dip after all the cheese is melted.
  • Serve immediately as a dip with tortilla chips or as a sauce over your favorite Mexican dish.
  • *Recipe Note: White American cheese is found at most deli counters in your local grocery store.
  • *Reheat Instructions: Store any leftover cheese dip in the fridge. Reheat in the microwave, stirring every 30 seconds until creamy and hot.

2 jalapeños, seeded and diced
2/3 cup half and half
1/2 cup cold water

Steps:

  • Place all ingredients into a microwavable-safe bowl.
  • Microwave on high for 5 minutes, stopping to stir after every minute. It might appear runny at first, but it will thicken up as it starts to cool down.

2 tablespoons fresh cilantro, chopped
1 jalapeno pepper, seeded & minced

1 cup monterey jack cheese or 1 cup asadero cheese, shredded
4 ounces diced green chilies
1/4 cup fat-free half-and-half
2 tablespoons green onions, finely chopped
2 teaspoons ground cumin
1/4 teaspoon salt, adjust to taste
3 sprigs fresh cilantro, minced (optional)
chopped jalapeno (optional)
cilantro leaf (optional)

Steps:

  • Combine all ingredients, except garnish of course, in a microwaveable bowl that has been sprayed or brushed with oil.
  • Microwave for 1 minute and stir.
  • Continue microwaving at 30 second intervals, stirring in between until cheese is melted.

1/2 lb White American Cheese, roughly chopped into 1" pieces
2 tablespoons chopped green chiles, frozen or canned will work fine
1 tablespoon pickled jalapeno slices, diced fine
1 tablespoon juice from the pickled jalapenos
1/3 cup milk
1/4 cup water
dash of cumin

Steps:

  • Combine all ingredients in a medium size glass bowl. Microwave for five minutes, pausing to stir after every minute. The dip will be very watery at first, but it will thicken as it finishes cooking. Serve hot, poured over just about anything that you want to make more delicious. Enjoy!
