Fajitas are an easy dinner option and this slow cooker version is fabulous. The meat is tender and absorbs the flavor of the spices and jalapeno. 2 lb flank or skirt steak or chicken breast
1 onion, thinly sliced
1 red pepper, sliced in strips
1 green pepper, sliced in strips
1 clove garlic, crushed
1 jalapeno, finely chopped
2 tsp chili powder
1/2 tsp ground cumin
1/4 tsp salt
1/4 c vegetable oil
1 Tbsp fresh lemon juice

Steps:

  • 1. Cut meat against the grain into 1/2 diagonal strips.
  • 2. Place in the slow cooker.
  • 3. Top with onions and peppers.
  • 4. In a small bowl, combine garlic, jalapenos, chili powder, cumin, salt, oil, and lemon juice.
  • 5. Pour mixture over the meat and veggies.
  • 6. Cover and cook on low for six to seven hours.
  • 7. Serve on warm flour tortillas with sour cream, shredded cheese, and avocado.
